Mango is a rich tropical fruit. During the mango season, which in my country, Venezuela, starts around May and lasts until the end of July, it is like a big party. Now in the month of March the flowers have already begun to set and we see the big trees loaded in what promises to be a good season.

When the fruit is ripe it has an exquisite sweet-acid flavor that everyone loves, when the loaded bushes begin to release the mangoes it is easy to see the kids from schools at dismissal time, running out to pick these first gifts, in my city it is easy to find these big trees in avenues, parks, squares and in the yards of the houses.

There are varieties of mangoes, among the most appreciated and known are: mango bocao, hilacha, garden mango and pico é loro, most are wild, although there is also a variety commonly called: mango graft or manga that is produced industrially, is more resistant and easily marketed.

I had a friend who said that there were statistics from the National Institute of Nutrition that affirmed that after the mango season the rates of anemia in infants dropped drastically, I do not doubt it, because it is a fruit with a high content of iron, vitamins A, B and C, with high fiber content. In season, one of the main juices we give our babies is mango juice and from a very young age they learn to eat this fruit in different presentations.

The ripe fruit is used to make juices, compotes, fruit salads, custard, mango pie, candy and the famous mango jelly. With the green mango there are people, especially boys, who eat it raw with salt and marinade, grated it is used in salads, mango chutney is prepared to add to grills and fish.

Of all the fruits, mango is one of my favorite and green mango juice is my favorite. I like its strong and defined flavor, sweet and sour playing to stand out until we achieve its perfect balance that lasts a long time on the palate. As it has a cooking process, its texture is smooth and thick, it is served very cold so it is very refreshing in this time of high temperatures.

As I told you, this is not the mango season, although it is possible to find them in supermarkets, so my first step was to go shopping, as you can see the baskets are full of green mango, it is the one we call graft mango and although its rind tends to be reddish, in these, the brown tones were the dominant ones. Let's go with the ingredients and the procedure.

Ingredients (six glasses approximately)

  • 3 green mangoes
  • 1 liter of water
  • 4 spoonfuls of sugar
  • Plenty of ice

Procedure

1.- Wash and peel the mangoes. My specialty is not the decoration of dishes and drinks, so I did not know how to decorate the juice, so I grabbed three models that I could use for the presentation. From the first mango I removed the peel as if it were an orange, a long spiral strip, from the second one, the reddest one, I removed a slice on both sides and from the third one, already peeled, I also cut off the two little caps on each side.

2.- I finished peeling them and cut them into slices until I removed all the pulp and discarded the seed. As I found one that was half ripe and half green, I couldn't resist the temptation to eat a little piece (ha,ha,ha).

3.- In a pot, put the liter of water and add the mango slices.

4.- Let it boil over high heat, until the mango softens, approximately 10 minutes, anyway it is appropriate to prick it with a fork and feel the softness of the mango. Remove from the fire and let it cool.

5.- Once cool, proceed to blend a first batch with the same water where we boiled it and taking care not to exceed in liquid so that the juice is not watery.

6.- In the second blending batch we add the sugar, which can always vary in quantity according to each one's taste. The amount of water can also vary according to the size of the mangoes. In my case, the liter of water was exactly the right amount. We combine the two parts and mix well.

7.- Once blended, prepare the glasses with ice and pour the juice into them.

El mango es una rica fruta tropical. En la época de temporada de mango, que en mi país, Venezuela, comienza aproximadamente en el mes de mayo y se extiende hasta finales de julio, es como una gran fiesta. Ahora en el mes de marzo ya las flores han comenzado a cuajar y vemos los grandes árboles cargados en lo que promete ser una buena temporada.

Cuando la fruta está madura tiene un exquisito sabor dulce-ácido que encanta a todos, cuando las matas cargadas comienzan a soltar los mangos es fácil ver a los muchachos de las escuelas a la hora de salida, salir corriendo a recoger estos primeros regalos, en mi ciudad es fácil encontrar estos grandes árboles en avenidas, parque, plazas y en los patios de las casas.

Hay variedades de mangos, entre los más apreciados y conocidos se encuentran: el mango bocao, el hilacha, mango de jardín y el pico é loro, la mayoría son silvestres, aunque también existe una variedad llamada vulgarmente: mango injerto o manga que se produce de manera industrial, es más resistente y de fácil comercialización.

Tenía un amigo que decía que existían estadísticas del Instituto Nacional de Nutrición que afirmaban que después de la temporada de mango los índices de anemia en infantes bajaba drásticamente, no lo pongo en duda, porque es una fruta con un alto contenido de hierro, vitaminas A, B y C, con alto contenido de fibra. En temporada, uno de los principales jugos que le damos a nuestros bebés es el de mango y desde muy pequeños ellos aprenden a comer esta fruta en diversas presentaciones.

Con la fruta madura se hacen jugos, compotas, ensaladas de frutas, natilla, pay de mango, dulce y la famosa jalea de mango. Con el mango verde hay personas, sobre todo muchachos, que lo comen crudo colocándole sal y adobo, rallado se utiliza en ensaladas, se preparan chutney de mango para agregar a parrillas y pescados.

De todos las frutas, el mango es una de mis predilectas y el jugo de mango verde ocupa el lugar de preferido. Me gusta su fuerte y definido sabor, dulce y ácido jugando por sobresalir hasta que logramos su perfecto equilibrio que perdura mucho rato en el paladar. Al llevar un proceso de cocción su textura es suave y espesa, se sirve bien frío por lo que es muy refrescante en esta época de altas temperaturas.

Como les comenté, esta no es la temporada de mango, aunque es posible encontrarlos en los supermercados, así que mi primer paso fue irlos a comprar, como pueden observar las cestas están llenas de mango verde, es el que llamamos mango injerto y aunque su corteza tiende a ser rojiza, en estos, los tonos marrones eran los dominantes. Vamos con los ingredientes y el procedimiento.

Ingredientes (seis vasos aproximadamente)

•3 mangos verdes
•1 litro de agua
•4 cucharadas de azúcar
•Abundante hielo

Procedimiento

1.- Lava y pela los mangos. Mi especialidad no es la decoración de platos y bebidas, así que no sabía cómo decorar el jugo, por lo que agarré tres modelos que me pudieran servir para la presentación. Al primer mango le fui quitando la corteza como si fuese una naranja, una tira larga en espiral, al segundo, el que tenía más rojo, le quité una tajada por ambos lados y al tercero, ya pelado, también le corté las dos tapitas de cada lado.

2.- Terminé de pelarlos y cortarlos en lajas hasta sacar toda la pulpa y desechar la semilla. Como me encontré con uno medio pintón, esto es entre maduro y verde, no aguanté la tentación de comerme un pedacito. (Ja,ja,ja,)

3.- En una olla, colocamos el litro de agua y le incorporamos las lajas de mango.

4.- Dejamos hervir a fuego alto, hasta que el mango ablande, Aproximadamente 10 minutos, de todas maneras es apropiado pinchar con un tenedor y sentir la suavidad del mango. Retiramos del fuego y dejamos enfriar.

5.- Una vez frío, procedemos a licuar una primera tanda con la misma agua donde lo hervimos y cuidando no excedernos en líquido para que no quede aguado el jugo.

6.- En la segunda tanda de licuado agregamos el azúcar, que siempre podrá variar en cantidad según el gusto de cada uno. En cuanto a la cantidad de agua, también puede ser variable, de acuerdo al tamaño de los mangos. En mi caso, el litro de agua me resultó exacto. Unimos las dos partes y mezclamos bien.

7.- Una vez licuado y mezclado, preparamos los vasos con hielo y vertemos el jugo
