I'm stopping by to share a culinary experience that I had while doing a panettone-making workshop in Kromi. I wanted to share this experience on Foodies Bee Hive to be able to show how it was made step by step.

I liked the way the ingredients were shown because there were SPONSORS, who showed their participation not only in some stands giving samples of their products, but also delivered the ingredients to do this workshop.

It was done in an open space in Kromi, in addition we started with the end which is the dough ready to let rise while we work, it is for the purpose of contributing in a way to make the workshop quick and efficient since the rising time of a bread is very wide.

The large mass is estimated to have weighed approximately 2 kg and they provided us with approximately 100 grams to place in our capacitors and let them rise next to a lit oven while we watch the paneton-making workshop.

We all went with great expectations, since an open call was made through the [Instragrans] page (https://instagram.com/kromimarket?igshid=MmVlMjlkMTBhMg==) there I registered, I was selected and now I am enjoying it for the first time time of such an event.

The paneton is going to be prepared in parts so that you can do your preparation well, the first thing we will do in this step 1 will be the preferment, which is very simple and will only be used 75 ml of water 12 GRS of granulated yeast 65 GRS of all-purpose flour.

It will be like a paste, a sticky mixture which is covered with a plastic bag.

As a second step we can weigh the following ingredients: 50 ml of water 3 yellow eggs 50 ml sugar 1 teaspoon panettone essence 50 GRS of unsalted butter 125 grams of all-purpose flour and weigh 125 grams of additional flour separately. Orange and lemon zest.

It is important to consider some tips, such as: the rising times are varied and the zests must be from the green part, do not take the white part because it will give it a bad flavor.

You are going to mix these ingredients, if you notice it is somewhat sticky, it is better not to add more flour, but knead well and after mixing with the first step, which was the preferment, let it rest for a while.

Now we are going to hydrate the dough again with: 2 yolks or yellow 55 ml of water 60 GRS of sugar 60 GRS of butter 155 GRS of Flour

These ingredients are mixed and incorporated into the dough and then added the other 125 grams of flour that were missing.

Mrs. Zaida is a cheerful participant who offered to knead the dough together with nitasCake, the young entrepreneur who taught the workshop.

And while the large panettone rests we can add the small ones that have been rising for some time. First you make a cut with scissors and add sliced almonds as decorations, you can also add butter to taste.

Baking is variable, the small ones that weigh 100 grams with 35 minutes in the oven are done and the large ones that weigh more than 500 grams with 45 minutes are fine, but remember each oven is different, so it is better to be aware.

Paso por aquí a compartir una experiencia culinaria que viví al hacer un taller de elaboración de paneton en Kromi, dicha experiencia la quise compartir en Foodies Bee Hive para poder mostrar cómo se elaboró paso a paso.

Me gustó la forma en que se mostraron los ingredientes pues habían PATROCINANTES, los cuales dieron presente su participación no solo en unos stand dando muestras de sus productos, sino que también entregaron los ingredientes para hacer este taller.

Se hizo en un espacio abierto de Kromi, además iniciamos con el final que es la masa lista para dejar leudar mientras vamos trabajando, es por cuestión de contribuir en un manera de hacer rápida y eficaz el taller pues el tiempo de leudado de un pan es bastante amplio.

La gran masa se estima que pesaba aproximadamente 2 kgs y nos proporcionaron aproximadamente 100 gramos para colocarlos en nuestros capacitor y dejarlos leudar junto a un horno encendido mientras vemos el taller de elaboración de paneton.

Todos íbamos con grandes expectativas, pues se hizo un llamado abierto a través de la página de Instragrans allí me inscribí, fui seleccionada y ahora estoy disfrutando por primera vez de un evento así.

El paneton se va a ir elaborando por partes para que puedas hacer bien tu preparación, lo primero que haremos en este paso 1 será el prefermento que es muy sencillo y solo se va a utilizar
75 ml de agua
12 GRS de levadura granulada
65 GRS de harina todo uso

Quedará como un engrudo, una mezcla pegostosa la cual se tapo con una bolsa plástica.

Cómo segundo paso podemos pesar los siguientes ingredientes:
50 ml de agua
3 amarillas de huevo
50 ml de azúcar
1 cucharadita de esencia de paneton
50 GRS de mantequilla sin sal
125 gramos de harina todo uso y tener aparte pesado 125 gramos de harina adicional.
Ralladura de Naranja y limón.

Es importante considerar unos tips, tales como: los tiempo de leudado son variados y las ralladuras deben ser de la parte verde, no tomen de la blanca porque le dará un mal sabor.

Se va a mezclar estos ingredientes, si se fijan es algo pegostoso, es mejor no adicionar más harina, pero amasar bien y luego de mezclar con el primer paso que era el prefermento dejar reposar un rato.

Ahora vamos a hidratar la masa de nuevo con:

2 yemas o amarillas
55 ml de agua
60 GRS de azúcar
60 GRS de mantequilla
155 GRS de Harina

Se mezclan estos ingredientes y se incorporan a la masa y luego incorpora los otros 125 gramos de harina que faltaban.

La Señora Zaida es una alegre participante que se ofreció amasar la masa junto con nitasCake la joven emprendedora que dictaba el taller.

Es importante romper la masa en trozos, para luego incorporar los líquidos y por último adicionar los 250 gramos de harina, si amasas bien el irá limpiando tus manos, y si queda muy aguada puedes adicionar de diez gramos en diez, pero lo mejor es amasar bien y no agregar ni un gramo para no alterar la preparación y la consistencia.

Una vez lista la masa, vamos a incorporar los siguiente:
140 GRS de frutillas
25 GRS de chocolate
20 grs de frutos secos
10 GRS de pasas
10 GRS de naranja confitada

La masa peso aproximadamente 1160, así que se van hacer dos paneton grandes de 570 GRS cada uno para los PATROCINANTES, nosotros nos llevaremos el paneton pequeño, pero de mucho valor.

Se divide la masa y se bolea para colocarlo en la base y dejarlo reposar frente al horno.

Y mientras los grandes panetones reposan podemos meter los pequeños que ya tienen tiempo leudando, antes haces un corte con tijeras y agregas almendras fileteadas de adornos, también puedes adicionar mantequilla al gusto.

El horneado es variable, los pequeños esos de 100 gramos con 35 min al horno ya están y los grandes que pesan más de 500 gramos con 45 minutos está bien, pero recuerden cada horno es diferente, así que es mejor estar pendiente.
