My sweet, milk-based pumpkin soup with homemade noodles - Polish cuisine in autumn

When you're thinking about soups, you usually think of some salty or spicy liquid. In Polish cuisine, there are several sweet soups, though. As our markets are overflowing with pumpkins nowadays, many of us make sweet pumpkin soup. It is pretty easy to do, and its taste is marvelous. We usually add cinnamon and cloves to it, so it can be similar to Indian desserts in taste.

For this soup I used:

  • about 0.75 l of milk;
  • about 1 kilo of pumpkin;
  • some powdered cinnamon;
  • some powdered cloves;
  • some lemon juice;
  • some sugar.

I wanted my soup to be orange, so I added more pumpkin, but some of its varieties don't give such color, and - as a result - my soup is only slightly yellow, but it's like a pudding. You can make it more liquid by adding less pumpkin. Use 2-3 cups of pumpkin cut into cubes if you want it to be more liquid.

For the noodles, I used:

  • 3/4 cup of wheat flour;
  • a little more than 1/4 cup of water;
  • 2 eggs.

Cut the pumpkin into cubes - of course remove seeds and the whole seed nest earlier, and peel the pumpkin.

Make milk boiling and make the heat very low. Add the pumpkin.

On the low heat, boil pumpkin in this milk for about 10 minutes, until it becomes soft. Also, add some powdered cinnamon and powdered cloves. Some people also like to add some cardamom to the soup.

When the pumpkin becomes soft, use a hand blender. You have now the soup ready, but you need your noodles.

Combine 3 ingredients - flour, water and eggs - in a small bowl. Use a tablespoon - stir this mixture, until it turns into dough. It should be similar to some thick cream.

Now, tilt the bowl and with the spoon pour small portions of the dough to the boiling soup. After 2-3 minutes, they'll form a kind of noodles, which will look like this:

Now, add some sugar to taste, and some lemon juice - just a little. Now your sweet pumpkin soup is ready. I hope you'll enjoy it :)
