Salad dressing is ridiculously easy to make, either by hand or by using a blender but sometimes I'm just not in the mood to worry about the ingredients emulsifying properly and all that.
So ... my trick is to use a jar and about 30 seconds.
I used a mustard jar this time, it was almost empty which was handy as mustard is one ingredient in my dressing.
The ingredients I used are 1/2 to 1 tea spoon of vinegar, some lemon juice, 1 spoon of mustard, salt, pepper, a pinch of sugar, some sort of oil and water.
I've added everything to the jar, filled it up to about 1/2 to 2/3 with oil and gave it a good shake. Everything blended together just fine.
Then I've added 1 spoon of pesto for a bit of an extra flavour boom and filled the rest up with water.
Another really good shake and that's it. I've got a smooth textured dressing with no watery or oily spots.
And the best thing is there's no washing up to do.
