Hello Hivers, and members of the Foodie Bee Hive community. This is my first post in the community, and for sure, it won't be the last since I love to eat and cook.
And talking about cooking, sometimes the day-to-day activities don't leave me much time, and I need to rely on quick and easy preparations. But that doesn't mean that we don't eat delicious things. And one of the quickest snacks I usually prepare is my easy Banana Muffins recipe.
Just yesterday, I made them, and we enjoyed them at home on a rainy afternoon with a cup of tea.
I got this recipe many years ago when I collaborated for a food blog. The original recipe wasn't for muffins but banana bread.
I modified the original sugar amount because I like them to be sweet but not too sweet. And whenever I can, as in this case, I substitute part of the sugar for papelón (unrefined cane sugar). And I prefer to make it in muffin cups than in a bread pan.
But without further ado, let's get to the recipe.
Ingredients
3 or 4 very ripe bananas, two eggs, 1/3 cup of sugar (white or brown), 1/3 Papelón (you can substitute it for sugar), 1 ½ cups of flour, 1 tsp of baking powder, 1 tsp of ground cinnamon.
Optional: you can add 1/2 cup of semisweet chocolate chips or raisins (I didn't have any of them at this time).
In a medium bowl, mash the bananas. I do it with a potato masher. Then add the ingredients in the following order: the eggs, sugar, and papelón, the flour, baking powder, and cinnamon. As you add the ingredients, stir the mixture with a paddle.
One of the things I love about this recipe, besides its taste, is that the ingredients are beaten by hand.
Pour the batter into the muffin pans. And bake them in a pre-heated oven at 180 degrees Celsius / 350 degrees Fahrenheit for 20 minutes or until a toothpick inserted into the center comes out clean.
If you prefer to bake the dough in a bread pan, you will have a great result too. You have to add about 10-15 minutes more to the baking time in this case.
Let cool at least 10 minutes before serving.
These muffins are a favorite afternoon snack in my family and are great to serve with a morning coffee. Also, I love to eat them for breakfast with some cream cheese. And believe me, you won't find and easiest recipe to make banana muffins than this one.
If you made it this far, thank you very much for reading.
