Hello Food Lovers

(Deutsche Version)
Today there are stuffed zucchini. I already have some experience with cooking leftovers from the fridge so this is very easy for me. We have rented a field for some time and harvest a lot of vegetables there. Everything in this recipe is from our field and harvested ourselves, except for the ground beef. So I have to cook something with the vegetables that are here. I don't think I have to mention how much better your own vegetables taste. It is only naturally fertilized and no chemicals are used for fertilizing or against pests. You can taste it and the nutrients should be much better.

Recipe

Ingredients:

  • large yellow zucchini
  • 3 medium-sized potatoes
  • a handful of peas
  • 2 red onions
  • 3 to 4 cloves of garlic
  • 500 gr. ground beef
  • smoked paprika powder
  • thyme

Salad:

  • yellow runner beans
  • a shallot
  • Savory
  • Vinegar
  • Olive oil
  • tsp mustard

Instructions

Peel the potatoes cut them into cubes, and then water so that the starch comes out a little. Pallet heirs and set aside.

Finely chop the red onions and garlic and add to the mince along with the smoked paprika and thyme.

Salt and pepper and then mix well. Put the potatoes in boiling water and after about 7 minutes add the peas. Continue to simmer for about 3 to 4 minutes. Then drain and interrupt the cooking process with cold water. Then leave it for a while before adding it to the minced meat. Mix well again, which turns out to be a little more difficult here. Halve the zucchini crosswise, take out the insides and then fill the halves with the minced meat.

Place in a casserole dish and put in the oven at 200 degrees for at least 60 minutes. Then sprinkle some Parmesan over it and bake for another 10 minutes. You can use other cheeses if you want, but I like the tangy taste of parmesan.

In the meantime cook the beans with the savory. This should take about 10 to 12 minutes. Then drain and quench.

Grate the savory with your hand so that you get some of the herbs and can put them into the dressing. For the dressing, finely chop the shallots, squeeze and chop the herbs. Mix well with the mustard, vinegar, olive oil, salt and pepper. Then add the beans and fold in. Set the salad aside and toss again before serving.

Heut gibt es gefüllte Zucchini. Ich hab schon einige Erfahrung mit Reste aus dem Kühlschrank kochen so fällt mir das hier sehr leicht. Wir haben seit einiger Zeit ein Feld angemietet und ernten dort jede Menge Gemüse. Alles was hier in dem Rezept steht, ist von unserem Feld und selbst geerntet, außer dem Rinderhack. Also muss ich mit dem Gemüse was hier ist etwas kochen. Ich muss glaub ich nicht erwähnen wie viel besser das eigene Gemüse schmeckt. Es wird nur natürlich gedüngt und keine Chemie zum düngen oder gegen Schädlinge benutzt. Das schmeckt man und auch die Nährstoffe dürften viel besser sein.

Rezept

Zutaten:

  • große gelbe Zucchini
  • 3 mittlegroße Kartoffeln
  • eine Handvoll Erbsen
  • 2 rote Zwiebeln
  • 3 bis 4 Knoblauchzehen
  • 500 gr. Rinderhack
  • geräuchertes Paprikapulver
  • Thymian

Salat:

  • gelbe Stangenbohnen
  • eine Schalotte
  • Bohnenkraut
  • Essig
  • Olivenöl
  • TL Senf

Anleitung

Die Kartoffeln schälen, in Würfel schneiden und dann wässern damit die Stärke etwas raus geht. Erben palen und zu Seite stellen.

Rote Zwiebeln und den Knoblauch fein hacken und mit dem geräuchertem Paprika und Thymian zu dem Hack geben.

Salzen und pfeffern und dann gut vermengen. Kartoffeln in kochendes Wasser geben und nach ca 7 min. die Erbsen hinzufügen. Für etwa 3 bis 4 minuten weiter köcheln lassen. Danach abgiessen und mit kalten Wasser den Kochvorgang unterbrechen. Danach etwas stehen lassen bevor man es zu der Hackmasse gibt. Wieder gut vermengen, was sich hier aber etwas schwieriger erweist. Die Zucchini quer halbieren, das Innenleben rausholen und danach die Hackmasse in die Hälften füllen.

In eine Aufläufform stellen und bei 200 Grad für mind. 60 min. in den Backofen. Dann etwas Parmesan drüber streuen und für weiter 10 min. überbacken. Man kann auch anderen Käse nehmen wenn man möchte, aber ich mag den würzigen Geschmack von Parmesan.

In der Zwischenzeit die Bohnen mit dem Bohnenkraut kochen. Das sollte ca 10 bis 12 Minuten dauern. Danach abgießen und auch abschrecken.

Das Bohnenkraut mit der Hand abreiben so das man einige der Kräuter bekommt und in das Dressing machen kann. Für das Dressing die Schalotten fein hacken, die Kräuter auspressen und auch hacken. Alles mit Senf, Essig, Olivenöl, Salz und Pfeffer gut durchmischen. Dann die Bohnen hinzufügen und unterheben. Salat zur Seite stellen und vor dem servieren noch mal durchmengen.

Uns beiden hat es gut geschmeckt. Falls jemand es nach kocht, lass mich wissen wie es geschmeckt hat.
