Greetings dear friends of this delicious community, today I bring you some "Callos". There are Portuguese and Spanish versions of this dish. In Spain they can be eaten as a main dish or as "tapas" to accompany a drink, usually beer or wine.

This is a hearty preparation from the caloric point of view, however this should not surprise us as it is a food prepared in several European regions adopting other names according to the variants of ingredients that are incorporated.

The main ingredient of the "Callos" is the beef tripe, that is to say, it is a dish whose protagonist is a viscera. For many people this dish is not attractive because they do not like how the stomach of the cow looks when it is raw, however I must tell you that the "Callos" belong to a group of emblematic stews whose preparation became popular in most of Europe since the Middle Ages. I must also add as a curious fact that in the Middle Ages the stews containing any protein, whether game meat, animal entrails or sausages were only prepared for the wealthy class, being the feudal lords who enjoyed these delicacies. In the case of the lower classes, called villains, their stews consisted of thick soups based on tubers, legumes and rye bread to give more body. So it is a preparation with history and ancestry although today for many it is not so.

The first thing to do is to clean the beef tripe well, wash it and let it soak for a couple of hours in vinegar. Rinse it well and cut it into small pieces. Then cook it for an hour in a pot with plenty of water, salt, peppercorns and bay leaves. When the time has elapsed, strain and set aside.

In a pot put two spoonfuls of vegetable oil and when it is hot fry the onion and the paprika chopped in pieces. Once we observe that the onion begins to become translucent add the beef tripe. Stir to ensure that everything is well incorporated.

Once the beef tripe is integrated with the other ingredients, we add the chickpeas, the sausage, the tomato paste and the olives. This is the moment to season with the garlic, salt and pepper.

Because of its preparation time, this is a very common meal to prepare on the weekend and if your family is large and a soccer lover, it can be transformed into a "tapa" that accompanied with a few slices of bread and a few cold beers will not go amiss 😋😋😋😋.
