When I started the paleo diet, the hardest thing for me was the lack of decent snacking options. Changing the way I approached food was a huge roadblock, and finding something other than handfuls of cashews, almonds and other nuts was tough. If I just grabbed a bell pepper and started munching on that, I would catch weird looks at the office, so I adapted and came up with a number of paleo friendly snack to eat throughout the day.
Today's paleo snack is my egg pepper cabbage combo.
Simple ingredients make for great healthy food
1 cubanelle pepper, chopped
1 orange pepper, chopped
1/2 small head of red cabbage, chopped
2-4 hard boiled eggs, chopped
Apple cider vinegar and a high-quality oil (1 Tbs each) for dressing.
I tossed this with the dressing, then seasoned with paprika, a pinch of salt and pepper.
This makes about two servings for me, but I eat a lot. Most people would list this as 4 servings. I also love eggs, so you could reduce the number of eggs if you wanted to. A great substitute for the eggs can be avocados for those who don't eat eggs. A topping of sunflower seeds also add a great crunch to this.
Here are the stats. These are an estimate only.
Calories per serving 260
Total fat 20g
