Nice to greet you again fellow #Hive and #Foodiesbeehive members. Recently, I have been in Portugal in the cities of Lisbon and Tondela for work reasons. This has allowed me to do some sightseeing after work and I have also been able to enjoy a great gastronomy such as Portuguese food in the 7 days I have been in this country.
One of the basic products of the Portuguese gastronomy is the Cod for many centuries. According to what one of my Portuguese clients explained to me about 8 years ago, the tradition of cod in Portuguese gastronomy dates back to the 14th or 15th centuries. At that time, Portuguese sailors went on long expeditions to conquer and discover new worlds. Specifically, when they reached the coasts of present-day Canada and Newfoundland, they began to fish for this fish, and because at that time only salt was available as a means of preservation and the return trip to Portugal was long, this is how salted cod came about.
Nowadays, this salted cod is the basis of Portuguese cuisine and according to every Portuguese I know there are more than 1000 recipes with this fish in the country and I really believe this fact because during my stay in Portugal in each restaurant I found a different recipe. Specifically, during my stay in Portugal I had cod for dinner in four days as a main dish and I wanted to share with you the picture of the dish, my opinion about the dish, I will indicate the restaurant where I ate it, I will share a link to the recipe and finally I will indicate my ranking of the 4 cod dishes I have tasted this week. I leave out of this post the cod rolls, as I consider them a starter and they are simply delicious.

This traditional dish of Portuguese gastronomy is very important to choose the right restaurant to eat it. Because if you go to a restaurant that uses less olive oil or a poorer quality olive oil, the recipe suffers. In my case, the restaurant where I ate it was the Queijadas de Belem Restaurant. The dish was very well presented and tasted very good, although for my taste they had overcooked it a bit and the cod was drier than the cod I have tasted in other occasions I have visited Portugal.

This dish was a total discovery for me. On other short stays in Portugal I had not heard of this dish. The clients I was working with couldn't believe that I didn't know about Cod with natas. This recipe is very mild and when well prepared is a delight to taste. This mixture of cod, potato, butter, onion and milk is a real pleasure for the palate. At the same time, it is a recipe that is not heavy on the stomach and for me it was ideal for going to sleep afterwards. I enjoyed this dish at the restaurant of the Vila Gale Opera Hotel where I was staying.

This Cod dish is one of the most traditional dishes along with Golden Cod and Baked Cod. For the preparation of this dish codfish, potatoes, corn bread, onion, garlic, bay leaf, eggs, milk and olive oil are used. Additionally, black olives can be used as garnish or in the case of Os Tres Pipos Restaurant in Tondela, they used some slices of dish coated with corn flour. The taste of this dish is spectacular due to the mixture of textures that the palate finds between the fish, the potato and the bread or corn flour. A whole whirlwind of sensations that anyone who likes fish will be amazed.

In Portugal, you can find a good dish of cod where you least expect it. On Sunday on my drive from Lisbon to Tondela at the Leiria service area I came across a fabulous dish of cod gratin which I was able to accompany with a tasty super bock abbey beer. This dish has similarities to cod with cream in terms of its ingredients, but the final touch of gratin makes it a very attractive dish, very good taste and perhaps because I did not expect this quality of food in a service area makes it very high in my ranking of cod dishes of the week.

This codfish recipe is one of the most important in the country. It is generally made with cod crumbs, eggs, potatoes, onion, oil, salt, parsley and olives. It has a very smooth texture and a very pleasant flavor. As in the case of Cod with cream, I enjoyed this dish during one of the dinners I had at the Hotel Vila Gale Opera in Lisbon.
RANKING
My particular ranking of these three recipes is as follows:
Fifth position: Lagareiro Baked Cod.
Maybe the reason for this position is because the preparation was a bit dry. I remembered this recipe being tastier on other occasions.
Fourth position: Cod a Bras
This fourth position I think is due to the fact that I liked the other three preparations better. Although the high onion content may also have influenced the position.
Third position: Cod au gratin
I liked this recipe very much, but the other two preparations made me feel a great satisfaction when I ate them.
First and Second position: Deciding between these two dishes is like having to choose between mom and dad. I can't choose one over the other. The cod with cream I loved the taste, but the cod with broccoli, the contrast of textures made it unique.

Encantado de saludarles de nuevo compañeros de Hive. Recientemente, he estado en Portugal en las ciudades de Lisboa y de Tondela por motivos laborales. Esto me ha permitido después de las jornadas laborales hacer un poco de turismo y también he podido disfrutar de una gran gastronomía como es la comida portuguesa en los 7 días que he estado en este país.
Uno de los productos básicos de la gastronomía de Portugal es el Bacalao desde hace muchos siglos. Según me explicó hace unos 8 años uno de mis clientes portugueses, la tradición del bacalao en la gastronomía portuguesa se remontaba a los siglos XIV o XV. En esa época, los marineros portugueses realizaban largas expediciones en conquista y descubrimiento de nuevos mundos. En concreto, cuando alcanzaron las costas de la actual Canadá y de la actual Terranova comenzaron a pescar este pescado y debido a que en aquella época solo se disponía de la sal como medio de conservación y el trayecto de vuelta a Portugal era largo, es como surgió el bacalao en salazón.
En la actualidad, este bacalao en salazón es la base de la cocina portuguesa y según presume todo portugués que conozco existen más de 1000 recetas con este pescado en el país y verdaderamente me creo el dato porque durante mi estancia en Portugal en cada restaurante me encontraba con una receta diferente. En concreto, durante mi estancia en Portugal he cenado en cuatro días como plato principal bacalao y quería compartir con ustedes la fotografía del plato, mi opinión sobre el plato, indicaré el restaurante donde lo he comido, compartiré un link a la receta y por último indicaré mi ranking de los 4 platos de bacalao que he probado esta semana. Dejo fuera de este post a los bollitos de bacalao, ya que los considero un entrante y son sencillamente sabrosísimos.

Este plato tradicional de la gastronomía portuguesa es muy importante seleccionar correctamente el restaurante para comerlo. Porque en el caso de ir a un restaurante que emplee menos cantidad de aceite de oliva o un aceite de oliva de peor calidad, la receta se resiente. En mi caso, el restaurante donde lo he comido fue el Restaurante Queijadas de Belem. El plato estaba muy bien presentado y de muy buen sabor, aunque para mi gusto se habían pasado un poco en la cocción y el bacalao estaba más seco respecto al que he probado en otras ocasiones que he visitado Portugal.

Este plato fue un total descubrimiento para mí. En otras estancias cortas en Portugal no había oído hablar de este plato. Los clientes con los que estuve trabajando no daban crédito de que no conociese el Bacalao con natas. Esta receta es muy suave y estando bien preparada es una delicia para el gusto. Esta mezcla de bacalao, patata, mantequilla, cebolla y leche es todo un placer de sabores para el paladar. A su vez, es una receta que no cae pesada al estómago y para mí fue ideal para poder después irme a dormir. Este plato lo disfruté en el restaurante del Hotel Vila Gale Opera en el que estaba hospedado.

Este plato de Bacalao es uno de los más tradicionales junto con el Bacalao Dorado y el Bacalao al horno. Para la elaboración de este plato se emplea bacalao, patatas, pan de maíz, cebolla, ajo, laurel, huevos, leche y aceite de oliva. Adicionalmente como adorno se puede emplear olivas negras o en el caso del Restaurante Os Tres Pipos de Tondela emplearon unas láminas de plato rebozado con harina de maíz. El sabor de este plato es espectacular por la mezcla de texturas que encuentra el paladar entre el pescado, la patata y el pan o harina de maíz. Todo un torbellino de sensaciones que a todo aquel que le guste el pescado quedará alucinando.

En Portugal, puedes encontrarte con un buen plato de bacalao donde uno menos se lo puede esperar. El domingo en mi viaje en coche desde Lisboa a Tondela en el área de servicio de Leiria me encontré con un fabuloso plato de Bacalao Gratinado que pude acompañar con una sabrosa cerveza super bock abadía. Este plato presenta similitudes al Bacalao con natas en cuento a sus ingredientes, pero el toque final de gratinado lo hace un plato muy atractivo, de muy buen sabor y tal vez porque no esperaba esta calidad de comida en un área de servicio lo hace estar muy arriba en mi ranking de platos de bacalao de la semana.

Esta receta de bacalao es una de las más importantes del país. Se elabora generalmente con migas de bacalao, huevos, patatas, cebolla, aceite, sal, perejil y olivas. Tiene una textura muy suave y un sabor muy agradable. Como en el caso del Bacalao con natas, el plato lo disfrute durante una de las cenas que realice en el Hotel Vila Gale Opera de Lisboa.
RANKING
Mi ranking particular de estas tres recetas es el siguiente:
Quinta posición: Bacalao al horno Lagareiro
Puede que el motivo de este puesto se deba a que la preparación estuviese un poco seca. Ya que recordaba esta receta más sabrosa en otras ocasiones.
Cuarta posición: Bacalao a Bras
Esta cuarta posición creo que se debe a que las otras tres preparaciones me gustaron más. Aunque el alto contenido de cebolla puede que también haya influido en la posición.
Tercera posición: Bacalao gratinado
Esta receta me gustó muchísimo, pero es que las otras dos preparaciones me hicieron sentir una gran satisfacción al comerlas.
Primera y Segunda posición: Decidir entre estos dos platos es como tener que escoger entre papa o mama. No puedo escoger a uno por encima de otro. El bacalao con natas me encanto el sabor sobre manera, pero del bacalao con broa él contrate de texturas lo hizo único.
