Quesillo is one of those traditional desserts from my country (Venezuela) that everyone loves. Adults and children alike can enjoy this delicious treat. Its smooth, creamy texture and flavor make it special and delicious 😋
But today I'm bringing you a slightly different version, because we won't be using any dairy. We'll be using milk or almond milk and adding a touch of coffee. Believe me, it's just as delicious as traditional quesillo.

-250 ml almond milk
-4 eggs
-1/2 cup sugar
-1/4 cup strong espresso
-1 teaspoon vanilla extract
-For the caramel: 120 grams sugar
-Pillow tin: 20 cm diameter
-Baking tray (larger than the flan tin)
Caramel: This time I'm going to show you how I made caramel without adding any water, using only sugar, but you're free to make it however you like.
We start by using a pan on the stove over low heat. When the pan is hot, we begin adding the sugar. We'll add it in three parts. Add the first part and let it cook until about half has melted. At that point, stir with a wooden spoon and add the second part of the sugar. Let it melt a little, stir again, add the last part of the sugar, let it melt a little, and stir constantly until the caramel is completely liquid. It's important to keep the heat on low throughout.
Caramelo: en esta ocasión voy a mostrarles como hice el caramelo sin agregar nada de agua, usando solo azúcar, pero estás en libertad de hacer el caramelo como más te guste.
Empezamos usando un sartén que llevamos a la cocina a fuego bajo, cuando sintamos que el sartén está caliente empezamos a echar el azúcar, esta la vamos a echar en tres partes, echamos la primera parte y dejamos cocinar hasta que veamos que aproximadamente más de la mitad se ha derretido, en ese momento removemos con la cuchara de madera y añadimos la segunda parte de azúcar, dejamos derretir un poco, removemos nuevamente, agregamos la última parte de azúcar dejamos que derrita un poco y removemos constantemente hasta que quede bien liquido nuestro caramelo, es importante tener siempre la cocina a fuego bajo.
Once the caramel is ready, we immediately pour it into the mold we are going to use; this must be done very quickly because this caramel hardens in a few seconds.
Mixture for the flan.
In the blender, add the 4 eggs, the plant-based milk, and the coffee. All these ingredients should be at room temperature.
We also add the sugar and vanilla.
We blend it very well.
We pour it into the flan mold; this mold should go inside a baking tray, and to this tray we will add hot water that reaches approximately halfway up the mold or a little less.
We cook at 190 degrees Celsius, the oven must be preheated, the cooking time is approximately one hour.
We take it out, do the test with the pastry toothpick, it should come out dry to make sure that our flan is ready, we let it cool to room temperature and put it in the refrigerator for at least 5 hours or overnight.
After the refrigeration time, the dessert is ready. I left it overnight, and here it is unmolded, ready to serve and enjoy! 😍 It's a really delicious flan, with a smooth texture. The coffee flavor is subtle, but it's absolutely delicious. I loved it! 👌
