La receta de hoy viene con mucho sabor a coco, aquí en casa tenemos algunos cocoteros y me tomé el tiempo para rallar dos cocos secos y extraer tres ingredientes a utilizar para el mismo.

Today's recipe comes with a lot of coconut flavor, here at home we have some coconut trees and I took the time to grate two dried coconuts and extract three ingredients to use for it.
Los rallé por el lado fino reservando primeramente 3/4 de taza de coco rallado, al restante le agregué 1/2 litro de agua, removí bien, colé exprimiendo bien, desecho el coco y lo colado lo refrigero. Luego de un tiempo se aprecia como se separa en la superficie la crema del coco, saco 1 taza, reservo. Además 1 taza del líquido que queda.

Los demás ingredientes a utilizar son:
1 paquete de galletas de coco de 300 gramos.
125 gramos de mantequilla .
1 leche condensada de 300 gramos.
35 gramos de gelatina sin sabor.
The other ingredients to be used are:

La preparación es muy sencilla, llevo a fuego bajo el agua de coco para calentar he hidratar la gelatina en ella apago y reservo.

Con un rodillo doy golpecitos a las galletas dentro de la misma bolsa hasta pulverizar. Derrito la mantequilla y se agrego a las galletas hasta formar una masa.

En una tortera desmoldable coloco la masa y esparzo hasta cubrir el fondo, refrigero unos minutos.
Llevo a la licuadora todos los demás ingredientes, leche condensada, crema de coco, gelatina hidratada, agrego el coco rayado,proceso por un minuto.
In a moldless pan I place the dough and spread until the bottom is covered, refrigerate for a few minutes.
I take all the other ingredients to the blender, condensed milk, coconut cream, hydrated gelatin, add the shredded coconut, process for one minute.
Agrego la mezcla a la tortera donde tengo el fondo de galletas. Refrigero por dos horas.
I add the mixture to the pan where I have the bottom of cookies. Refrigerate for two hours.
Pasado el tiempo desmoldo y obtengo éste hermoso pie de coco.
After the time is over, I unmold and get this beautiful coconut pie.
