So I'm again back after like almost two years of not posting on eccency and here we are again joining one of my favorite weekly challenge by Ladies of hive where we get to pick a weekly topic and write about it.
So this week we are discussing a Recipe that reminds me of my Roots. Well a little introduction here I'm a Sindhi Pakistani so by ethnicity Sindhi people belong to Ancient Indus civilization roots and because most of our ancestors were eeither farmers, fishers or Sailors. We naturally have a very diverse Cuisine like. You would find Sindhi pasta, Biryani anything we just have our own recipe for it as the ancestors that travelled out and roamed in the world learnt new things and came back with that knowledge so our cuisine is just diverse in its own way.
How ever if you are a sindhi there is one dish you would always love and cherish in your life and that is " Busri "
So what exactly is this dish? its a 3 ingredients simple little sweet bread we make as Breakfast in Really cold winters. Busri with a Cup of hot chaai is like the ultimate thing we could ever wish for.
So here is the recipe for it.
Ingredients:
Jaggery (mollases)
wheat dough
hand churned fresh butter
Recipe : So we take whole wheat flour about two cups put a pinch of salt in it and knead it into a soft dough that doesn't stick to your hands.
next step is to grate our molasses or jaggery into a bowl with a cheese grater.
The butter is locally produced and we get it fresh from the barn near by.
We make a ball out of the wheat dough
and roll it out on the slab
now we put the grated jaggery on it and roll out

another dough ball into another flat bread and cover the top of the jaggery.
So its two flat wheat breads rolled out and in between them is the Grated jaggery. now we pinch the sides of this bread so the jaggery when its caramelized doesn't fall out.
Now we take a iron pan and heat it up and on to it goes our prepared bread
we let it toast and flip it carefully making sure the bread doesn't break.
now on the toated side we add alot off butter and let it melt now we fry this bread with butter making sure its all greassy and buttery.
then serve it out on a hot plate.
Now what is the science how is this gonna taste not like a oily mess? the answer is cause when u cut the bread open the molten jaggerry mixes with the butter making it into a caramel sauce which thickens as the wheat bread swallows most of the moisture and sweetness making the flavor mellow and quite sweet. Its literally like Eating a pie .
I remember my mom would mix all it up and make bite sized pieces for me of this so i could devour it . And on top of it we would have sweet black tea.
This dish is like nostalgia and also its like such a simple yet Nice recipe.
