SPICY POTATO TARKARI- MADE IN MINUTES

My family love this as its quick and satisfying...just hitting that spot either as a side dish or a snack

You will need:
2 Large potatoes, sliced into 2inch pieces. washed, drained.
2tbsp veg oil
1/2 tsp mustard seeds, 1/2 tsp cumin seeds
10 curry leaves
1/4 tsp crushed chilli flakes
salt
1/2 tsp ground cumin
1/4 tsp tumeric
1 large finely chopped ripe tomato
fresh coriander leaves, chopped
1-2 bullet chillies ( as theyre not as hot as finger chillies) slit on one side

here's what you need to do:

  • heat the oil in a large frying pan and add the cumin and mustard seeeds until they crackle and release their aroma.
  • throw in the curry leaves, until they change colour and then add the tomatoes and tumeric
  • once they have softened, stir in the potatoes and mix until they are coated
  • stir fry over a medium heat for 3 minutes
  • sprinkle in the chilli flakes, cumin powder, salt and 'dry fry' for a minute before adding a splash of water
  • throw in half the corriander leaves and whole green chillies cover and cook on low heat for 10 mins or until potatoes are soft to the touch but not breaking.
    -sprinkle the remainder corriander leaves just before serving

This is delicious hot or cold wrapped on tortillas and drizzled with sour cream.
