"Goodbye" Cookies

Hello there, Blockchain Foodies!

It's been a while since I came around to share a recipe, but trust me! This one is worth it! As a friend was preparing to migrate, she asked me once again for cookies. So, after spending 6 years without making some, I had a good enough reason to make someone some goodbye cookies.

And as she told me, they were delicious!

Let me show you how to make it. These are the ingredients:

  • 200g of all purpose flour
  • 1/2 tablespoon of baking powder.
  • 100g of sugar
  • 100g of salted butter
  • 1 tablespoon of vanilla extract.
  • 1 egg
  • lemon zest to taste
  • 125g chocolate chips

The dry mix for this recipe is quite simple. Measure your flour and add the baking powder. If your flower of already has some leavening agent, you can skip the baking powder. I like to sift my flower to avoid crumps. And that's a big issue when you live in a place with high humidity percentages.

Once this is done, you'll need to measure 100g of butter. If your butter comes is slim rectangles, you don't have to measure. Those come in 100g pieces. As for me, using this artisanal butter means measure again. The butter has to be cold. The reason for this is that we need to mix it with the flour to create a sort of wet sand mixture.

To avoid heating too much butter, work with your fingertips until it is thoroughly mixed. Then, we can move on to the next mix.

This part includes the egg, vanilla, zest and sugar. Measure the latter and then add the rest of the ingredients. Use a blender or do it by hand until the grains of sugar have dissolved.

Next, pour the wet mix into the dry mix. To combine both mixes use folding motions. The idea is to incorporate both things without deflating the mix. Keep folding until you see everything has come together without lumps. You can use any utensil that makes it easier. In my case, I used a wooden spoon.

The last step that I didn't photograph is to refrigerate the mix for at least an hour in your fridge. To do this, use some parchment paper and make the dough into a cylinder. Wrap it in the paper and put it in the fridge. This will help relax the dough and also make it firm.

After an hour, take the dough out of the fridge. Remove the paper. Now you can cut the dough in the number of pieces you want to use. The thickness of the dough will determine the size of the cookies. Keep that in mind before storing it.

Put the cookies on a tray and bake it in a preheated over at 180°C (around 350°F). They should take from 10 to 12 minutes to bake. As for shaping, you don't need to do a lot to make them take any shape as baking will give them their cookie looks.

I found this recipe on YouTube shorts and it looked simple enough to try it out!

And they served their purpose as goodbye cookies for that dear friend who now lives in another country.
