Dear foodies, here finally the promised sponge roulade dough recipe. In June i made a post about, how to roll the roulade and and today was finally a good opportunity to bake a roulade again for my niece's birthday. This time not the dark version with cherries, but the light version with strawberries. But there are no limits to the imagination for the filling, very tasty is for example also a blueberry roulade, or the classic: just with jam without whipped cream.
Ingredients dough:
5 eggs
1 egg yolk
75 g sugar
1 pck vanilla sugar
90 g wheat flour
½ tsp. baking powder
Filling:
400 g whipped cream
1 pkg cream stiffener
strawberries or other fruits
First mix the 5 eggs and the 1 egg yolk on high speed until creamy:
Then carefully add the sugar and vanilla sugar little by little. Still mix on high speed, about 5 minutes in total, until a really creamy foam appears:
Mix flour and baking powder. Turn the mixer on a very slow speed and gradually add the flour mixture until everything is well mixed. But do not mix too long, it should remain nice and creamy and fluffy.
Spread the dough on a baking sheet lined with parchment paper and bake for 15 minutes at 180 degrees convection.
It should still be very light and soft, then it is ready. Do not be alarmed if it rises high at first, it will settle again. It is best not to open the oven during the baking time.
Prepare a clean cotton or linen kitchen towel and sprinkle a thin layer of granulated sugar on it. After baking, the dough immediately comes upside down on the cloth.
The baking paper is pulled off (can be difficult at first at the corners, but with a knife it works well) and then the dough must be rolled immediately into the cloth while still warm:
So the roll may now cool down a little bit, meanwhile prepare the filling. Chop the strawberries and whip the cream with the cream stiffener.
Carefully roll up the pastry roll and briskly spread with the cream, scatter the strawberries and quickly roll up again:
Cool the roll well down in the refrigerator and sprinkle with powdered sugar just before serving. Bon appetit :-)

Liebe Leckermäulchen, hier nun endlich das versprochene Biskuit Roulade Teig Rezept. Zum Vatertag gab es von mir den Post, wie man die Roulade rollt und heute war endlich eine gute Gelegenheit zum Geburtstag meiner Nichte wieder eine Roulade zu backen. Diesmal nicht die dunkle Variante mit Kirschen, sondern die helle Variante mit Erdbeeren. Der Fantasie sind für die Füllung aber keine Grenzen gesetzt, sehr lecker ist zum Beispiel auch eine Heidelbeer Roulade, oder der Klassiker: Einfach nur mit Marmelade ohne Schlagsahne.
Zutaten:
5 Eier
1 Eigelb
75 g Zucker
1 Pck Vanillin-Zucker
90 g Weizenmehl
½ TL Backpulver
Füllung:
400 g Schlagsahne
1 Pkg Sahnesteif
Erdbeeren oder andere Früchte
Zuerst die 5 Eier und das 1 Eigelb auf höchster Stufe mixen, bis es cremig wird, danach vorsichtig nach und nach den Zucker und Vanillezucker zufügen. Immer noch auf höchster Stufe mixen, insgesamt ca 5 Minuten, bis ein richtig cremiger Schaum entsteht:
Mische Mehl und Backpulver. Schalte den Mixer auf eine sehr langsame Stufe und füge nach und nach die Mehlmischung hinzu, bis sich alles gut vermengt hat. Aber nicht zu lange mixen, es soll ja schön cremig und fluffig bleiben.
Vertreiche den Teig auf einem mit Backpapier ausgelegtem Backblech und backe ihn 15 Minuten bei 180 Grad Umluft. Er soll noch sehr hell und weich sein, dann ist er fertig. Erschreckt euch nicht, wenn er zuerst hoch aufgeht, das legt sich wieder. Am besten den Backofen während der Backzeit nicht öffnen.
Bereite ein sauberes Baumwoll oder Leinen Küchentuch vor und streue dort eine dünne Schicht Kristallzucker auf. Nach dem Backen kommt der Teig sofort verkehrt herum auf das Tuch, das Backpapier wird abgezogen (kann an den Ecken erst schwierig sein, aber mit einem Messer geht das gut) und danach muss der Teig noch warm sofort in das Tuch gerollt werden:
So darf die Rolle jetzt ein wenig abkühlen, währenddessen die Füllung vorbereiten. Erdbeeren klein schneiden und Schlagsahne mit dem Sahnesteif schlagen.
Die Teigrolle vorsichtig aufrollen und zügig mit der Sahne bestreichen, die Erbdeeren verstreuen und schnell wieder aufrollen.
Die Rolle im Kühlschrank gut durchkühlen lassen und kurz vor dem Servieren mit Puderzucker bestreuen. Guten Appetit :-)

Am nächsten Foto seht ihr gut den Zucker, der ja auf der Unterseite des Teiges war und daher braucht auch die Schlagsahne keinen weiteren Zucker.
