( EN / DE ) At the last minute I found time today to bake these delicious Christmas Elisen gingerbread and do not want to deprive you of this recipe:
Ingredients:
400 g sugar
1 pkg vanilla sugar
5 eggs
450 g ground almonds
125 g ground walnuts
80 g finely chopped candied lemon peel
80 g finely chopped candied orange peel
grated zest of a lemon and orange
3 teaspoons gingerbread spice
round wafers
peeled halved almonds for decoration
First, put the eggs in a mixing bowl and beat until foamy.
Now add the sugar and vanilla sugar and mix for a long time, preferably with a food processor, until the mixture has approximately doubled in size and has good consistency.
Meanwhile grind the walnuts and chop the candied lemon peel and candied orange peel.
Mix ground almonds and walnuts with the chopped oreangat and gingerbread spice, as well as the grated zest of lemon and orange (untreated of course).
Now add this nut mixture to the egg mixture, stirring constantly until a nice, firm dough is formed.
This dough mixture should now be refrigerated overnight. I made them in the afternoon and then put on the balcony for 3 hours. It is very cold here at the moment, this has fit perfectly.
But the recipe actually recommends a longer cool resting time.
After that, you can start shaping the gingerbread. It is advisable to have a bowl of water for your hands, as the dough becomes quite sticky. Form small balls and press them onto the smooth side of the wafers. If you have probems, use a little water for your fingers.
Decorate, depending on how you like it, with the almond halves and press them a little into the dough.
It is also possible to bake the gingerbread without the almonds as decoration. If you like, you can also coat them with icing or chocolate icing.
Personally, I like them best with the almonds:
The baking tray goes into the oven at 200 degrees normal heat or at about 160-180 degrees convection and is ready after about 15 minutes, when the gingerbread is lightly browned and firm on the outside, but still soft on the inside. In no case should you bake them until they are completely cooked through, then they would be too dry.
The gingerbread is just right when it is nice and soft and juicy on the inside.
For the variant with chocolate or icing I have unfortunately no good recipe for you, mine are not so one hundred percent successful that I would like to share these.
But any kind of frosting or icing with dark chocolate would work and taste fine.

Elisen Lebkuchen glutenfreies einfaches Rezept
In letzter Minute habe ich heute noch Zeit gefunden, diese leckeren weihnachtlichen Elisen Lebkuchen zu backen und möchte euch dieses Rezept nicht vorenthalten:
Zutaten:
400 g Zucker
1 Pkg Vanillezucker
5 Eier
450 g gemahlene Mandeln
125 g gemahlene Walnüsse
80 g fein gehacktes Zitronat
80 g fein gehacktes Orangeat
geriebene Schale einer Zitrone und Orange
3 TL Lebkuchen Gewürz
runde Oblaten
geschälte halbierte Mandeln zum Dekorieren
Als erstes gebe die Eier in eine Rührschüssel und rühre sie schaumig.
Füge jetzt den Zucker und den Vanillezucker hinzu und rühre das ganze sehr lange, am besten mit einer Küchenmaschine, bis die Masse in etwa verdoppelt hat und gute Konsitenz hat.
Mahle die Walnüsse und hacke das Zitronat und Orangeat klein.
Vermische gemahlene Mandeln und Walnüsse mit den gehackten Oreangat und dem Lebkuchengewürz, sowie der geriebenen Schale von Zitrone und Orange (unbehandelt natürlich)
Füge nun diese Nussmischung unter ständigem Rühren der Eiermasse zu bis ein schöner, fester Teig entsteht.
Diese Teigmasse soll nun über Nacht kühl gestellt werden. Ich habe sie nachmittags gemacht und dann für 3 Stunden auf den Balkon gestellt. Es ist ja sehr kalt hier zurzeit, das hat perfekt gepasst.
Aber das Rezept empfiehlt eigentlich eine längere kühle Rast-Zeit.
Danach kannst du mit dem Formen der Lebkuchen beginnen. Es empfiehlt sich, eine Schüssel Wasser für die Hände zu haben, da der Teig ganz schön pappig wird. Forme kleine Kugeln und drücke diese auf die glatte Seite der Oblaten. Wenn sie zu sehr kleben tauche deine Finger ein wenig in Wasser.
Dekoriere, je nachdem wie es dir gefällt, mit den Mandelhälften und drücke sie ein wenig in den Teig hinein. Natürlich kann man die Lebkuchen auch ohne die Mandeln als Deko backen und sie danach mit Zuckerguss oder Schokoladeglasur bestreichen.
Ich persönlich mag sie natur mit den Mandeln am liebsten:
Das Backblech kommt bei 200 Grad normale Hitze oder bei ca 160-180 Grad Umluft in den Backofen und ist nach ca. 15 Minuten fertig, wenn die Lebkuchen außen leicht gebräunt und fest, aber innen noch weich sind. Auf keinen Fall darf man sie so lange backen, bis sie ganz durch sind, dann wären sie zu trocken.
Richtig ist der Lebkuchen, wenn er innen schön weich und saftig ist.
Für die Variante mit Schokolade oder Zuckerguss habe ich leider kein gutes Rezept für euch, meine sind nicht so hundertprozentig gelungen, dass ich dieses hier gerne weitergeben möchte.
Funktionieren und schmecken würde jede Art von Zuckerguss oder Guss mit dunkler Schokolade.
