Chicken Rotisserie was some kind of a joke amongst my friends and me. Back in the days when we were working together, we would almost every day ask each other what's up for dinner and the most common answer -- rotisserie. The one from Spinney's, specifically.
It's an instant, cheap dinner that we can upgrade/twist into some other delectable dish. Spinney's? Well just because it was located just at the same building where our office was. Haha.
Come following day and as we talk about our day, we would casually mention what breakfast had been, and guess what? Just another variation from the rotisserie, more commonly chicken rotisserie omelet.
The other day, I ran out of meal ideas for my children. These small people are very picky eaters. So I thought that rotisserie should save my day, but nah. It turned out I was the only one interested in it (and my eldest).
Needless to say, I had a big chunk of leftover the following day. I thought of "upgrading" it for more taste and ahmm, texture?
Hah! It's nothing fancy, but just stir-fried vegetables and rotisserie chunks. I rummaged through my fridge and took whatever veggies were there.
I found cauliflower, carrots, and green capsicum.
The next steps were fairly easy. Just heat the pan, add olive oil, and then butter. Saute the onion and then add the carrots and cauliflower.
Add the chicken and then put some oyster sauce.
Normally, when we stirfry, we have garlic. I intentionally did not saute the garlic with the onion because I still have the parsley pesto that I made a few days back. I shall get the garlic flavor from there.
Add salt and pepper according to taste.
I like the capsicum to be a bit crunchy so I added it last.
And tadaaa! My "upgraded" rotisserie. Who would have thought that it was? LOL.
The dish would have been great with some broccoli and mushrooms, but I didn't have at that time. Some cubed potatoes would have been nice too, but I'm (desperately) trying to cut on carbs so...
