Honestly, when one says "pesto" I would only think about basil. Pesto is the very reason I chose to grow basil - - I love it so much. 馃槏
I have so far only made one small batch of pesto from this mini garden. You can find how I did it here. I said there that I got inspired by @samstonehill's pesto post. It was also where I found out that parsley can also be made into pesto.
Basically, any herb with nuts and olive oil is pesto? Correct me if I'm wrong.
Parsley is an herb with a distinct flavor that can really take your dishes to the next level. It is also rich in nutrients-- low in calories but high in Vitamins A, C and K [1]. I love adding chopped parsley to my pancit (rice noodles), soup, lumpiang shanghai (spring rolls), but this is my first time to try making parsley Pesto.
Here's what you'll need to make this very tasty and fresh tasting sauce:
Some would add parmesan cheese to their pesto, but since I don't currently have it, I skipped parmesan. Lemon juice is also optional but for me, the tanginess added to the freshness of the sauce.
It is really easy to make this sauce. Just put everything in the food processor, pulse a few cycles and you're done.
I don't actually measure the ingredients. I am the type who goes by instinct though I prefer it to be a bit more garlic-y.
After pulsing the ingredients to a creamy consistency, transfer it to a clean glass jar and add a bit more olive oil on top.
It's really very easy to make, not to mention delicious and nutritious. It's a great match to pasta obviously, but what I recently discovered? It's so good with the Egyptian flat bread that we recently started to love too.
It is good as it is, pesto and bread alone, but adding scrambled eggs is really yummy too!
My kids love the pesto on pasta (anything pasta, actually!), but I have yet to make them try it on the flat bread. It's cool being able to make them eat veggies without them really noticing, picky eaters that they are. 馃槣
I'm hoping to be able to harvest from my basil soon to make another batch of basil pesto. By the likes of it, we could be having pesto more frequently now trying out different herbs. I wonder if kale pesto would be a nice idea?
