The combination of young coconut with avocado served cold can be an option for desserts on a hot day.
Have you ever served avocado for sweet treats, for desserts, or for drinks? In Indonesia, we are used to enjoying sweetened avocado. Maybe in your area, it's different, I've heard there are people who prefer to eat avocado with salt.
The simplest way to serve avocado in my area is by adding sweetened condensed milk to the avocado flesh, then mashed until well mixed and served with ice cubes, or without ice cubes.
Then for another method, I used to mix avocado flesh with palm sugar and coconut milk. Then, I also often serve mashed avocado for toast topping.
This time I will serve avocado with cold young coconut water, and young coconut flesh, then add coconut milk and palm sugar.
I happen to have all the ingredients in the fridge. I've been dreaming of making some refreshing desserts on this super hot day. So, stay tuned!
The Ingredients
- An Avocado
- 50 ml of coconut milk
- two tablespoons of palm sugar
- A young coconut, water, and the flesh
HOW TO SERVE DESSERTS
To make a dessert blend of avocado and young coconut, it's very easy. But indeed, there is one thing that is difficult, namely splitting the head into two parts to take the coconut flesh. But it will be easier if you have coconut meat ready to use.
First, I prepare the young coconut first. Make a small hole in the top of the coconut shell, then remove the water, and put it in a serving glass. Put coconut water into a serving glass only half of the glass because we will add other ingredients.
After the coconut water has been removed, split the coconut into two parts, then remove the flesh using a spoon. Unfortunately, the stock of young coconut that I bought this time was not of very good quality.
This is still too young, not yet time to be harvested into a young coconut that is ready to be enjoyed. But, on the OT side, I can still find a bit of young coconut flesh on the side of the coconut.
In the next step, I switched to preparing avocado. Remove the avocado flesh, then add the avocado flesh into a serving glass that previously contained young coconut water.
After adding the avocado, then add the young coconut flesh.
Then, add coconut milk on top of the young coconut milk and avocado. Add according to your taste. You can also use your favorite cream if you like it.
For the final touch, add palm sugar. Don't brown sugar. Palm sugar has a finer texture like sand compared to brown sugar which is coarser and harder in texture.
You can add ice cubes if you feel it's not cold enough. Or, it can be stored in the refrigerator first if you still have time to postpone eating.
