Cinnamon Sugar Pie Crust Cookies
Ingredients
1 Pie Crust
3 Tablespoons Sugar
3 teaspoons ground Cinnamon
Instructions
Preheat oven to 350 degrees F. Line large baking sheet with parchment paper. On a floured surface, roll out pie crust to about a 13 in x 10 in rectangle. Next in a small bowl add in sugar and cinnamon and mix until combined. Sprinkle the sugar and cinnamon over the pie crust. Starting with the short end, roll crust until you have a tightly rolled log. Slice into 1 in wide cookies and place on baking sheet that has been lined with parchment paper. Bake cookies for 13-15 minutes. Pull them out the oven and let the cool on a wired rack completely. Enjoy!
