The day before yesterday I did not have time to bake bread, and on my way home from work it was snowing and I could not afford to go to a bakery, so I bought bread at a supermarket for the first time in a long time. We ate it for breakfast and lunch, about enough for two days, for 1 euro. I was very thankful for the price. I was glad to have an easy time, but my family said that home baked bread was better. I was so happy that I baked bagels at night even.

While baking bagels, I wanted to write about my bagel memories from bagels baked my mother and those I bake these days by myself. So here they are!

Bagels baked by my mother

My mother loved to bake bread, and for about 40 years she baked bread for the family. In addition to the toast breads and butter rolls, she would sometimes try new breads, and bagels were one of them. She started baking bagels when I was a teenager and said, "I've never had bread with a boiling process. It takes additional efforts and time, but it's worth doing so." Not only did we eat them at home, but she also made me bagel sandwiches for school lunch and clam school snack.

It is a pity that it wasn't the digital camera time yet. I have no photos left ...

The Tokyo days when I bought them at the store

When I lived in Tokyo as an engineer, there was a bagel chain called Bagel & Bagel near my house, and I often went there to buy bagels. It seems there is no longer a store at the location, but the chain itself still exists. I missed the good old days when I saw their website.

They had a sweet bagel with a name like Frozen Ice Bagel, but I couldn't find it, I guess it was too kiwi. I didn't hate it though 😁

Traveling to NY for bagels

I loved bagels and flew to NY ... that is half true and half false. I had other purposes too but eating real NY bagels was one of the main purposes. I was so happy that I asked a bagel shop person to put so many ingredients in my bagel sandwich that it looked like a tower. We laughed at it a lot. The person pushed it down and somehow managed to wrap it.

About 10 years later, I had a chance to visit NY again and of course I went to eat the real bagels. They were as delicious as ever. Now I want to travel to NY again 😊

I started baking bageles myself in Germany.

After moving to Germany, I always had a big oven at home, which is not common in Japan and since bagels are not much common in Germany, I started to bake my own bagels. My family also loves bagels. Speaking of family and bagels, here's a picture of my daughter biting on a bagel, probably only about 6 months old ...

I have been using the same recipe for a long time now. It hasn't changed from the recipe I wrote on Hive Blog in 2020.

Bagels don't have to be in the doughnut shape. You can also wrap sausage (or tofu sausage if you don't eat meat) around them.

一昨日はパンを焼く時間がなく、仕事帰りは雪でパン屋さんに行く余裕もなく、久しぶりにスーパーマーケットでパンを買いました。朝ご飯やお弁当に食べる、2日分くらいの量で1ユーロ(150円ほど!)でありがたい限りです。楽できてよかったなあと思っていたら、家族が「うちのパンの方がおいしい」とのことで、うれしくなって、外出で疲れていましたが夜ベーグルを焼きました。

ベーグルを焼きつつ、ベーグルの思い出について書きたいと思いました。

母の焼いたベーグル

母はパンを焼くのが大好きで、それこそ40年日々家族で食べるパンを焼いていました。定番の食パンやバターロールに加えて、新しいパンに挑戦することもあり、ベーグルもその一つでした。私が10代の頃にベーグルを焼き始めて、「茹でる工程のあるパンなんて初めて。手間はかかるけどおいしいね」と言っていたのを思い出します。家で食べるのはもちろん、学校や塾のお弁当ではベーグルサンドイッチを持たせてくれました。

まだデジカメ時代、スマホ時代ではなく、写真が残っていないのが残念です。

お店で買っていた東京時代

会社員時代に東京の恵比寿に住んでいたときに、自宅近くにBagel & Bagelというベーグルのチェーン店があり、よく買いに行っていました。当時の場所にはもうお店はないようですが、チェーンとしては存在していて、ウェブサイトを見て懐かしくなりました。

冷凍のアイスベーグルのような名前の甘いベーグルがあったのですが、見当たらず、キワモノすぎたのかな。私は嫌いではありませんでした😁

はまりにはまってNYまで

ベーグルがあまりにおいしくて、NYまで遊びに行ってしまいました。というのは半分本当で半分嘘です。他にも目的があったので。うれしくてサンドイッチの具を入れすぎてタワーのようになったベーグルを見てお店の人とゲラゲラ笑いました。つぶして包んでもらってちょっと大きめのベーグルとしていただきました。それにしても昔の写真は解像度が荒い・・・・・・😅

その約10年後、またNYを訪ねる機会があり、もちろん本場のベーグルを食べに行きました。相変わらずおいしかったです。

ドイツで自分で焼くように

ドイツに移ってからは、常に自宅に大きなオーブンがあるようになり、ベーグルはドイツであまり一般的ではないこともあって、自分でベーグルを焼くようになりました。家族もベーグルが大好きです。家族とベーグルといえばこの写真・・・ベーグルにかぶりつくうちの子、多分まだ6ヶ月くらいです。

もうかれこれずっと同じレシピで作っています。今見返してみると、2020年にHive Blogに書いたレシピと変わっていません。

ソーセージ(お肉を食べない人は豆腐ソーセージなど)を巻いたりしてもおいしいです。
