Hey everyone, Today I wanna show you how to prepare a Jollof spaghetti, I know most Nigerians will be familiar with the word "jollof" as it's being use in Jollof rice(which is a major delicacy being served in most Nigerian parties) but this time its gonna be in a new dimension, I will be using spaghetti instead of rice and I will be showing you how I prepare my jollof spaghetti...Ohh my God.....I'm sure many of you will b salivating after reading through. Its really a delicious meal.
INGREDIENTS
- Spaghetti
- Boneless raw chicken
- Chicken stock
- Cooking oil
- Red Bell Peppers
- Yellow and Green Bell Peppers
- Carrots
- Scotch Bonnet
- Whole Medium Onion
- Medium Onion Chopped
- Stalks Green/Spring Onions
- Cloves Garlic Minced
- Teaspoon Minced Ginger
- Bay Leaves
- Curry Powder
- Thyme
- Black Pepper
- Shrimps
- Seasoning cubes
- Salt
PREPARATION - Chop the raw chicken into small pieces and mix with one seasoning cube and half teaspoon of garlic,leave it for an hour in order to allow the seasoning to penetrate inside d chop chicken. Slice the yellow, green and red bell peppers, spring onions and carrots and Set aside.
- Pour water inside a pot and allow it to boil, then add the uncooked spaghetti inside the boiling water and some drops of cooking oil. The cooking oil prevent foaming and stucking of the spaghetti while cooking. Cook the spaghetti until its tender and transfer into a seive or drainer so as to drain out the water.
*Blend the tomatoes, 2 red bell peppers, 1 onion and 2 scotch bonnet till smooth. Pour the cooking oil into pot, place on a cooker on medium heat, when itâs hot, add the chopped onions, blended pepper, curry powder, thyme, bay leaves, 2 seasoning and salt to taste. Fry till oil floats to the top.
- While thatâs frying, get another pot, place on a cooker and add 3 tablespoons oil. When itâs hot, add half of the chopped onions, then add the chopped garlic, Add the marinated chicken and the black pepper, fry till fully cookedâŠ
- Add the chopped peppers, carrots, spring onions and allow it to fry for 5-6 minute.
- Set aside...hmmm...I wish u can smell the aroma.
- Check on the pepper, when itâs done, add the chicken stock, cook for 2-3 minutes.
- Now, add the cooked spaghetti, stir vigorously, taste for salt/ seasoning, adjust if necessary. Then add the fried veggies and chicken. mix thoroughlyâŠ.
- Leave to cook for 2 to 3 minutes.
- It's done
