COCONUT KISSES // Besos de coco [ENG-ESP]
Who gave that name to that Venezuelan food? I have no idea. 🤷♂ What I do know is that it has a special flavor. I've been eating them since I was a child, and I love them. I learned to make them on my own during the pandemic era, when there was more time in the house and anxiety spoke in our ears 😵. It is extremely economical and with materials that are easily available anywhere in the country. All photos are my own, taken with my Oppo RealMe 7 phone.
¿Quién le puso ese nombre a ése dulce venezolano? No tengo ni idea 🤷♂. Lo que sí sé es que tiene un sabor especial. Desde pequeño los consumo, y me encantan. Aprendí a hacerlos en la era de la pandemia, cuando había más tiempo en la casa y la ansiedad nos habla al oído 😵. I usually had to buy the coconut kisses, but when I prepared them myself I realized how important it is that the papelón has other spices, which helps it to have a peculiar flavor 🤤. I have tried it with spices and without spices, and I can tell the difference, although I don't have the trained palate that chefs have. So whenever I can, I like to have the right spices. Although I used to use a blender, thanks to being taught a new technique to whisk the mixture with a fork, that's the one I've been using the last few times, and I consider it better. less stuff to clean up!😉 Well, these are the ingredients:
Generalmente tenía que comprar los besos de coco, pero al prepararlos yo mismo me di cuenta de lo importante que es que el papelón tenga otras especias, lo cual ayuda a que tenga un sabor peculiar 🤤. Lo he probado con especias y sin especias, y puedo notar la diferencia, aunque no tengo un paladar entrenado que tienen los chef. Así que cada vez que puedo, me gusta tener las especias adecuadas. Aunque antes usaba batidora, gracias a que me enseñaron una nueva técnica para batir la mezcla con un tenedor, es la que he venido empleando las últimas veces, y lo considero mejor. ¡Menos cosas para limpiar! 😉Bueno, éstos son los ingredientes:
INGREDIENTS
500 grams of wheat flour
1 shredded coconut
1/4 papelon melted
500 ml water
10 tablespoons of oil
2 eggs
1/2 teaspoon baking powder
1 tablespoon vinegar
1 tablespoon vanilla essence
Cinnamon to taste
Cloves to taste
INGREDIENTES
500 gramos de harina de trigo
1 coco rallado
1/4 papelón derretido
500 ml de agua
10 cucharadas de aceite
2 huevos
1/2 cucharadita de polvo para hornear
1 cucharada de vinagre
1 cucharada de esencia de vainilla
Canela al gusto
Clavos de olor al gusto
We start with the papelón. We add all the spices and heat it a little bit. This is where our noses perceive those cells that send the pleasant information to our brain that we are preparing something special. The kitchen is impregnated with a pleasant aroma, which will then be transferred to the mixture 😋. Obviously, in a photo you cannot perceive the difference with the paprika to which we add the spices. You will notice it in the smell.
Mix the solids. In a bowl we put the flour, the baking powder, and mix them. And then, we add the rest of the ingredients, except the coconut. I was taught that in the flour we can open some small volcanoes and place each one in them, but although I usually get it, I didn't get it for this photo 😕. So in one of those cavities we put the two eggs, the oil, the vinegar, and the room-temperature papelón. Everything should have looked tidy.
Empezamos con el papelón. Le agregamos todas las especias y lo calentamos un poco. Aquí es donde nuestras narices perciben ésas células que mandan la agradable información a nuestro cerebro de que estamos preparando algo especial. La cocina se impregna de un agradable aroma, que luego será transferido a la mezcla 😋. Obviamente, en uno foto no se percibe la diferencia con el papelón al que le agregamos las especias. Lo notarás en el olor.
Mezclamos los sólidos. En un recipiente colocamos la harina, el polvo para hornear, y los mezclamos. Y entonces, se le agregan el resto de los ingredientes, menos el coco. Me enseñaron a que en la harina podemos abrir unos pequeños volcanes y ubicar a cada uno en ellos, pero aunque generalmente me sale, no me salió para ésta foto 😕. Así que en una de esas cavidades colocamos los dos huevos, el aceite, el vinagre y el papelón ya a temperatura ambiente. Todo debería haberse visto ordenado.

Entonces empezamos a batir con un tenedor. Vamos agregando el resto del agua poco a poco. Así que obtendremos en poco tiempo una mezcla homogénea como ésta: 👇
👆 Did you see the little bubbles from the effect of the baking powder? That's a good sign. Then add the grated coconut. And beat a little more until it is integrated into the mixture.
👆¿Vieron las pequeñas burbujas por el efecto del polvo para hornear? Es una buena señal. Entonces agregaremos el coco rallado. Y batimos otro poco hasta integrarlo a la mezcla.
This is when we will obtain a mixture similar to this one, where the coconut has been fused with the rest of the ingredients:👇

We already have the baking pan greased and floured. Some prepare them with separate portions. That is, they place portions of the mixture on a tray, without touching, and bake them that way. But I use the other way, which is to place all the mixture in a cake pan, as we do with the sponge cakes and pies. I think it is less complicated, and besides, the first way uses more time, needs more space in the oven, uses more trays, and therefore more things to wash at the end! Better not. We put all the mixture in the pan, taking care to distribute it evenly. I like to reserve some of the shredded coconut to put on top of the mixture. It will stay there, it won't sink, for when we take it out of the oven it will give it appeal, contrasting its white with the dark color of the mixture. There you see it:👇
Ya tenemos la tortera para hornear engrasada y enharinada. Algunos los preparan con porciones separadas. Es decir, en una bandeja van colocando porciones de mezclas, sin que se toquen, y los hornean así. Pero yo uso la otra forma, como lo es colocando toda la mezcla en una tortera, como lo hacemos con los bizcochos y tortas. Creo que es menos complicado, y además, de la primera forma se usa más tiempo, se necesita más espacio en el horno, se usan más bandejas, y por ende ¡más cosas que lavar al final! Mejor que no. Colocamos toda la mezcla en la tortera, cuidando distribuirla uniformemente. A mi me gusta reservar un poco del coco rallado para colocárselo encima de la mezcla. Quedará allí, no se hundirá, para cuando lo saquemos del horno le dará atractivo, contrastando su blanco con el color oscuro de la mezcla. Allí lo ven:👇

The coconut kiss is not usually fluffy, but it is soft. It also doesn't rise as much because of the ferment. My wife likes it hot, fresh out of the oven. I like it better when it's already at room temperature. If we are careless, we could eat it all in the same day😜. This time we took a couple of portions to take pictures for you.
El beso de coco no suele ser esponjado, pero sí es suave. Tampoco se eleva tanto por el fermento. A mi esposa le gusta caliente, recién sacado del horno. A mi me gusta más cuando ya está a temperatura ambiente. Si nos descuidamos, podríamos comernos todo en le mismo día😜.
