Whole Food Plant-Based Breakfast!

This morning we had a wonderful whole food plant-based (WFPB) meal. You may have read my first recipe where I mentioned that we're trying to adapt more of a WFPB lifestyle. I realized that it may not be obvious as to what that means, because it wasn't to me at first. A WFPB diet is not just veganism, which is our current diet, it's a diet where you only eat whole unrefined plants. For example, coconut or vegetable oils, and apple juice are not WFPB. I do not live by a strict WFBP lifestyle, but I try to enjoy several WFPB meals a week. One easy trick is to simply cook our veggies in water as opposed to oil. I was surprised at how many of our common meals could be transformed to WFPB dishes just by eliminating oil. I wanted to share our breakfast with you this morning to show you that you don't have to miss out on any deliciousness to have a WFPB meal! Lastly, this was my first time trying avocado toast and it was amazing! If you haven't tried it yet you need to plan to in the near future!
