Quick vegan scrambled eggs 🐣

If you have access to tofu - it is super easy to re-create scrambled eggs as vegan and let chickens have some rest 😁

I have been eating this for breakfast for over two years now and it never gets boring for me as I always change the vegetables in the recipe and you can use seasonal veggies, different sides and it is almost a different dish every time 🍽️

You will need (1 portion):

  • 1 small onion
  • 1 celery stalk
  • 1/4 red pepper
  • 90 g. tofu
  • A handful of spinach
  • 0,5 teaspoon of turmeric
  • 1 teaspoon olive oil (for frying)
  • Salt, pepper to taste
  • Few spring onions

Preparation:

  1. Fry all the chopped vegetables on oil for about 5 minutes.
  2. Scramble the tofu with a fork or hand into small pieces and put in the pan together with veggies. Bake for a few more minutes until the vegetables are soft and the tofu is browned.
  3. Add spices, spinach and onion leaves to the pan and mix everything.
  4. Serve with cucumber, tomato, sauerkraut, boiled beets and bread. Avocado or other vegetables are also very suitable.
