Rice flour Recipe for "Kalamayhati"

Hello aseanhivers! How are you all? I would like to share my favorite recipe from traditional dish called "Kalamayhati".

It is made of glutinous rice flour. First you need to measure how many cups you like to make them soak it with water overnight. The ratio would be one is to one.

To complete the process, you need the following ingredients:

Kalamayhati

• 4 cups sticky rice flour
• 4 cups coconut milk
• 4 cups brown sugar
• 4 cups water
• 1 tsp vanilla

First, you need to soak the sticky rice flour over 4 cups of water was described above. You may adjust it according to your measurements.

Next, squeeze the grated coconut over four ups of water. 2 big whole coconuts if preferable for a more creamy taste.

You need to caramelize the coconut milk first adding the brown sugar over low heat to avoid getting burnt, stirring occasionally.

Wait until it is concentrated when the natural coco oil ooze out.

Then pour the soaked sticky flour (including the water) stirring occasionally. Stir it until the liquid part is gone and sticky. Well, you need patience to do this. It should be over low heat, okay? Else you will get a burnt taste!:) Take note: Your ladle should be firm enough to do stirring because it could be so sticky that you need to apply subtle force)

We like to put it on a saucer using fork when eating this delicious snacks!

To preserve, we wrap it with young banana leaf. You may heat the leaf over low fire to make it limp or cut and soak it with boiling water to make the wrapping more comfortable.

Sellers do this or you may put it in a small disposable container.
