Citrus season is in full swing and I decided to prepare an orange marmalade. I never liked store-bought orange marmalade because in general it has a bitter taste. I wanted to make a sweet and not at all bitter marmalade. And you know what? I did it π Spread on buttered bread or on a croissant for a great start to the day! I can't wait for tomorrowβs breakfast!
Ingredients:
- 2 kg of large oranges (2 oranges need to be organic, since you will use their zest)
- 500 ml of water
- 500 g of brown sugar
- 80 g of gelatine leaves
- juice of 1 lemon
- 50 ml of Rhum
- 1 teaspoon of cinnamon
Peel the two organic oranges, since you will their zest. For this recipe we will use only the orange part of the zest, so be careful and try not to peel any of the white part of the orange. If there is any left, remove it with the tip of a knife.
Place the peel in a small saucepan and boil in water for 20 min.
Cool it down and cut into small, tiny strips.
Peel the remaining oranges and cut them into small pieces.
Place them in a bowl and cover them with water.
Cook over a moderate heat for half an hour.
Add the finely chopped zest, lemon juice, Rhum, cinnamon and sugar and cook for another 45 minutes.
Soak the gelatine leaves in the water. When it is soft, squeeze the water out and add it to the marmalade. Stir in the gelatine (as slowly as possible and stirring constantly), bring to boil and then simmer for a minute.
Pour the marmalade into jars and wrap them well in a blanket and leave to cool slowly.
