Hearty Chicken Soup with Leftover Roasted Chicken

After feasting on Christmas Eve dinner (which I blogged on it on my previous blog), we had roasted chickens left. A few of us took home the leftover chickens. One of my friends said she would cook a big pot of Chinese dish called 'chai buey' which is sweet-sour-spicy gravy dish with mustard vegetables. Another friend said she would just turn it into chicken salad. Another person who took back the leftover chicken was me. As for me, I wanted to cook minestrone but I did not have canned tomatoes nor did I have tomatoes paste. So, I cracked my head so hard until nothing left but just chicken soup. Lol...

Hearty Chicken Soup

One precious advice given by my Aunt — Never throw away any bones be it from chicken or turkey or fish or other bones. Always turn them into some healthy soup or broth. She does that a lot.

For this, I was needing some convenience at home more than an ideal perfect cook because my son was not well, still needing tubefeed, I preferred to cook something quick to cut down some stress at home. I popped into kitchen to find out that I had only onions, celery and carrots left. I also had some dried herbs so I just added whichever I thought suitable. Let's just cook a soup with these! Anything goes.

Ingredients

  • Leftover roasted chicken (with whole bones)
  • 5 sticks celery
  • 1 big carrot
  • onions
  • bay leaves
  • dried thymes

Seasoning

  • Salt
  • Pepper

Steps

Chopped the celery, onions and carrots to your desired shapes or sizes. In a pot, water was added together with the chicken. Then, followed by adding in the leftover chicken, celery, carrots, onions, bay leaves, dried thymes. Put to boil for 3 hours because I really wanted the bones cooked till everything out to create a super delicious soup and healthy broth. After 3 hours, salt and pepper were added. I just needed to add a dash because the soup was flavourful enough.

Let's Eat!

I was about to boil rice to eat with it until my husband suggested to add in whatever pasta we had. I had some macaroni and spaceship pasts left. So I cooked them. Husband also went out to buy some potatoes, so I cut the potatoes and steamed them then added into the pot of soup.

To serve, just scoop the desired amount of pasta, and added in the soup. Eat while warm, super soothing hearty healthy chicken soup pasta. Yumsss!!

It was a huge saving cost after I cooked this pot of soup and pasta. We ate this for lunch, dinner and another lunch. Haha.
