An authentic Thai boat noodles at Waterfall food stall

One of the stalls at Golden Mile Food Centre that I've been wanting to try is Thai Boat Noodles Waterfall, which specializes in a particular dish—Boat Noodles!

I've noticed this dish is gaining popularity, as more and more restaurants and food stalls are offering it. I remember dining at BKK Thai Restaurant and trying their version, which was just 80 cents per bowl. I was confused at first—how could a bowl of noodles be so cheap? It turns out the serving size is just one or two bites, encouraging you to order several bowls and sample different flavors.

Today, this stall offers a large serving of Boat Noodles. Since the weather was still warm, I opted for the dry version. It had the same ingredients, but the soup was served separately, giving me the flexibility to eat it however I preferred, which I really liked.

What I’ve noticed about the Thai stalls in food centers is their authenticity. The person making the dish knows exactly what they’re doing, and the taste is unmistakably authentic. This was clear the moment I received my bowl of noodles!

In this dish, I chose Thai white noodles for the carb base, and the rest of the toppings were already set. It included pork slices, meatballs, and deep-fried pork lard. For vegetables, it came with bean sprouts and water spinach. I really like this combination because it adds both nutrition and texture to the dish.

The variety of pork toppings is what really makes this dish outstanding! My favorite is the pork meatballs. I’m not sure how they prepare them, but they’re perfect for my taste, dense yet still tender and juicy, with excellent seasoning. That’s something I truly appreciate about Thai cuisine; they know how to bring out the flavors and enhance the taste of every ingredient.

This stall also stands out to me because of the extra care they put into their service. For example, they use ceramic bowls and wooden chopsticks, which elevates the overall dining experience.

They also offer extra seasonings like chili paste, chili powder, sugar, and fish sauce for you to customize your bowl. I noticed one of the customers mixing these in specific proportions, and I’m curious to try it next time to see if it improves the dish even more.

On my next visit, I think I'll try the soup version. It would be perfect to have it in the evening.
