Barbecue salmon with rice

While visiting my uncle in Crooked River Ranch, Oregon…

We were planning to have barbecued salmon, fried zucchini, and sticky white rice for dinner, but somehow, the rice didn’t turn out correct. My side of the family isn’t accustomed to preparing sticky rice, so I’m guessing the instructions got messed up. Anyway, the rice was soggy and we needed a fix… but first-

We cut and fried up some zucchini in a frying pan with olive oil. Nothing special, lightly seasoned with salt and pepper.

Next, a simple salad. Very simple with ranch dressing.

For the salmon, we wrapped it in foil and barbecue it. This way the skin peels off when you take it out of the foil.

This was the time that we figured out something went wrong with the rice. Not enough time to recook a new pot of rice, we agreed some milk, pepper and salt to make a simple Risotto. We took the salmon out and meat that was still in the foil and cooked them with the rice. This turned the messed up rice into a salmon risotto.
