Lately I got obsessed with desserts that are melting inside. Molten berry lava cakes are perfect to prepare for your loved ones, or even for just for yourself.
Ingredients for cakes:
- 2 flax eggs (2 tablespoons of flaxseeds and 4 tablespoons of water)
- 160 ml of rice milk
- 120 ml of canola oil
- 1 teaspoon of apple cider vinegar
- 1 teaspoon of vanilla extract
- 60 g of sugar
- 120 g of all-purpose flour
- 60 g of cacao powder
- ½ teaspoon of baking powder
- ½ teaspoon of baking soda
- a pinch of salt
- 2 tablespoons of margarine for greasing the muffin tray
- 3 tablespoons of powdered chocolate
Ingredients for berry sauce:
- 200 g of berries
- 40 g of sugar
- 50 ml of water
Preparation:
- Soak flax seeds in a bit of water for about 10 minutes.
- Put 200 g of mixed berries in a small saucepan. Add sugar and water and slowly bring to a boil. Simmer for 5 minutes while stirring. Set aside to cool down.
- Sift dry ingredients through a sieve in a bowl; all-purpose flour, cacao powder, baking soda, baking powder and sugar. Mix it together.
- Mix wet ingredients in an electric mixer bowl; rice milk, canola oil, apple cider vinegar, vanilla extract and flax eggs. Mix slowly while adding the dry ingredients, spoon by spoon. Mix until well combined, but don't overmix.
- Grease 6 ramekins in the muffin tray with margarine and dust it with flour. Put a tablespoon of cake batter into each muffin ramekin.
Add 2 teaspoons of berry sauce on top of each.
Cover with another tablespoon of cake batter. Don't fill it up to the top, leave a bit of space for the cakes to rise.
- Place it in a preheated oven at 175°C and bake for 20 minutes.
- Flip the cakes on a cooling rack and cool it down a little bit or completely before serving.
- Dust it with powdered chocolate and decorate with the leftover berry sauce.
