Here I am again sharing with you a dish that is a favorite of Ilocanos in my country, the Philippines. Ilocanos are known to be vegetable-loving people. Also, Ilocanos are known for their use of fish sauce and fried fish on their dishes, especially on vegetables. By the way, I am an Ilocano from the province of Nueva Ecija that is now living here in Quezon City, Philippines.
Today, I am going to introduce to you a dish called "Inabraw". Inabraw has many variants and one of them is "Inabraw na Saluyot at Sitaw with Fried Fish". Most of the time this dish consists of Saluyot (Jute), Sitaw (String Beans), and Papaya. In the absence of Papaya, you can just use Sitaw and Saluyot. If Sitaw is not available then you can just use Papaya and Saluyot. You can cook this dish with or without Tamarind.
Ingredients:
- Saluyot (Jute)
- Sitaw (String Beans)
- Fried Fish (about 2-3 tablespoons)
- Fish Sauce
- Onion
- Salt (to taste)
Preparation
1. Wash the Jute then separate all the good leaves from the stem
2. Wash the String Beans then slice them according to your preference
3. Slice the Onion
4. Have the fried fish ready (I fried these fishes in advance)
5. Ready 2-3 tablespoons of fish sauce
6. Wash the Tamarind
Cooking
1. Put all the fried fish in a casserole or pot then add some water until all of them are almost submerged then let it boil
2. When it starts to boil add the fish sauce and the onion then let it boil again until you smell the aroma of the onion
3. When you start to smell the aroma of the onion add the Jute and the String Beans at once. Dip the Jute and the String Beans into the soup so that they will be cooked evenly
4. When the Jute and the String Beans are about to be cooked add the Tamarinds and let them boil
5. When you see that the Tamarinds are starting to pop remove all of them then put them on a bowl and add some soup
6. Using a spoon press down all the Tamarinds until their content renders into a sticky soup, add more boiling soup to get all of the Tamarind flavors (repeat until you get all the content of the Tamarinds). If you are done add the soup that you get in pressing down the tamarind into the dish then let it boils until it incorporates into the soup
