Preparing Cucumbers to Eat

Recently I posted a photo about buying cucumbers to use as part of my healthy diet and describing some of the health benefits. Now here is what I do to get ready to eat the long English variety I purchased.

I use a fork to scrape cuts through the skin. There are health benefits to the bright green rind, but I find it tough to eat and chew and not that pleasant if I eat it whole. So after washing, it is a simple matter to make these cuts and have a more enjoyable experience.

I’m using this cucumber in a sandwich today and so will cut these further into thin rounds. If I was using them in salad and I would cut them into chucks instead.
