My Homemade Vegetarian Cannelloni with Walnuts, Tomatoes and Red Wine

This is a lovely vegetarian cannelloni with walnuts, tomatoes and red wine.. Absolutely delicious

Ingredients - Serves: 4

12 cannelloni tubes or large squares of pasta
sea salt
1 onion, peeled and chopped
1 garlic clove, crushed
2 tablespoons of olive oil
225g tomatoes, skinned and chopped
175g walnuts, chopped
175g fine wholemeal breadcrumbs
1 teaspoon basil
150ml red wine
freshly ground black pepper
575ml cheese sauce

Put pasta into boiling salted water. Cook the cannelloni for about 4 – 5 minutes only, so that its pliable but not collapsed, lasagne or pasta squares until just tender. Set the oven to 200 C (400 F) or gas mark 6. First fry the onions and garlic in oil for about 10 minutes, then remove from the heat and add the tomatoes, walnuts, breadcrumbs, basil, wine and seasoning. Now spoon mixture into cannelloni , or put on top of the pasta squares, then make into rolls. Put in a greased shallow ovenproof dish and then cover with the cheese sauce. Bake for 45 minutes.
