Amaranth porridge is perfect option for a healthy breakfast or dessert.

Ingredients:
1/2 cup amaranth
1 1/2 cup water
1/4 cup plantbased milk (my favorite is coconut milk)
sweetener of choice
few drops vanilla extract
1/2 tsp cinnamon
Boil the amaranth in water for about 25-30 minutes, then add the milk, sweetener and vanilla extract. Stir it a couple of times, then turn off the heat and add the cinnamon.
Serve it with your favorite fruits.
