My RECIPE for: Coconut Rice with Mango 🌴 [VEGAN, GLUTEN & SUGAR FREE]

Hi! Do you like mango sticky rice? I love coconut and mango and I created my version of this popular dish in Thailand.

It's vegan (dairy free), naturally gluten free and sugar free healthy meal 😊 

Coconut rice with mango is a perfect idea for hot breakfast or lunch, and served cold, for dessert.

Ingredients: 

  • 3/4 cup of white sticky rice (can soak it for a few hours before cooking) 
  • 2 cups of coconut milk (I used organic milk without sugar)
  • 4 dates (I used fresh ones)
  • vanilla stick 
  • a pinch of Himalayan salt 
  • 2 tablespoons coconut shrims 
  • a teaspoon of black sesame 
  • one ripe mango 

Preparation:   

Rinse the rice under water, then put in a pot and pour 1, 5 cups of coconut milk. Add salt and cut along the stick of vanilla, boil.  After a while reduce the gas on stove, add chopped dates and coconut shrimps. 

Cook for about 45 minutes. - 1 hour, stirring occasionally and adding water if necessary. 

Leave the rice for a few minutes under the cover, it has to have a sticky texture. 

At the same time, cut the mango into cubes.  

Put the hot rice into bowls, pour over coconut milk, sprinkle with black sesame seeds and decorate with mango.
