Ulog #241: Wings or Drummets?

Chicken wings are probably my favorite part of the chicken although I do like the chicken as a whole and it's different flavors of each part. But if you'd ask me to pick a part of the chicken that is my favorite, then it's gotta be the chicken wings.

The meat is dark meat and it's packed full of flavor when cooked right but it also has a white meat part on the drummet that gives you the best of both white meat and dark meat all in one piece.

Here are my roasted chicken wings that I did for a catering recently and it's been a favorite for people that cater us for their event or function. We always get rave reviews whenever we do our chicken wings as they taste brilliant and tender to the bite.

I marinade them with a combination of smoked paprika, oil, salt and black pepper, and some sriracha sauce for moisture as well as it's spicy kick. I oven roast it for about 40 minutes on a low temp to get it cooked all the way through without drying out. This low and slow method really packs in the juices in the wings instead of it leaking out onto the tray.

I normally serve this with either a blue cheese dip or a sweet and sour barbecue sauce.
