Grab-and-Go Power Breakfast: Mango Passion Fruit Chia Seed Parfait ღ ღ ღ

When overnight oat parfaits, green smoothies or a bowl of yogurt just won't do the trick for you, look to chia seed pudding for an equally healthy and delicious breakfast or snack. It is easy to make and super delicious and nutritious.

You might know the chia seeds from the famous chia pets, but they ar more than just a fun planting experiment for kids. These little seeds are packed with omega-3 fatty acids, complex carbohydrates, protein, fiber, antioxidants, and calcium.

Ingredients (serves 2 for breakfast)

1 cup unsweetened almond milk (other nut milk works too)
4 tbsp chia seeds
0.5-1 tsp vanilla extract
2 cups mangoes, chopped
2 passion fruits
1/2 cup plain unsweetened coconut yogurt or regular yogurt

Directions

  1. In a bowl, combine chia seeds, vanilla, and almond milk. Whisk well to combine. Refrigerate for a few hours or overnight. If you want to make turn this into a grab-and-go breakfast or snack, divide the mixture over jars with lid.
  2. Remove the pudding from the fridge after it has set and spoon the mixture into a medium sized jar or glass.
  3. Blend the chopped mango until smooth and creamy. Layer it on top of the chia pudding.
  4. Spoon the yogurt on top of the mango layer and top with the passion fruit flesh.
