I was sleeping last night with a full tummy when I cooked Kinilaw and Caldereta. There was no specific occasion, but I was craving for these foods. How can I diet if I am the one assigned in the kitchen? 😁 Below are the recipes of my home made viands. But before I start, I just like to share a trivia about Kinilaw and Caldereta. Kinilaw is a Pinoy food, mostly well-known in Mindanao that is made by vinegar and raw tuna. Caldereta is a traditional specialty of stewed goat meat, but these days, many people use pork and chicken because goat meat is rare. The Caldereta word is taken from the Tagalog and Bisayan dialect Kambing and Kanding.
