Chicken & Ham Crunchy Cheese Roll, served with Sausage & Rutabaga soup with a side of Fried Cheese bites!
I will admit there were times in my life when I did not do my homework for the job. Ordinarily, I go to work prepared with a lunch special in mind, but on this day I arrived both late and unprepared, so I had to think quickly on my feet.
The crunchy roll was chicken breast and a smoked thin deli ham wrapped together with swiss cheese. This idea stemmed from the classic Cordon Bleu. It was wrapped tightly and quickly deep fried until lightly crispy.
The fried cheese bites I came up with a nifty trick for. I take an oven pan, put a thin layer of butter, add shredded cheese, and then put a thin piece of panini bun on top. I leave it in the oven until the bread toasts, and by that time the cheese is also fried and I remove them from the pan as quickly as I can.
In Canada I find people like to dip things into things, so the cheese bites go into the soup! The sausage & rutabaga soup I prepared the day before, I always take pride in my soups! No added oils, no cornstarch, I always thickened with potato and cabbage. I tried to do it right, just like my grandma would!
