Today I made shredded chicken breast; I love using this cut of chicken for this recipe. This time, I highlighted the sweetness of the carrot and the flavor of the onion and bell pepper. This combination worked really well—at least, I thoroughly enjoyed it for a delicious lunch.
Ingredients:
- 1/4 chicken breast
- 1/2 carrot
- 1 onion
- 1 bell pepper
- Salt to taste
- 2 cups water
- Oil
Preparation:
I washed the chicken breast and put it in two cups of water to parboil. I added a tablespoon of salt. It was ready in fifteen minutes.
I washed the herbs and the carrot thoroughly with plenty of water. I removed the seeds from the bell pepper and peeled the onion and carrot. Then I cut them into small pieces.
I sautéed the pieces in a skillet while waiting for the chicken breast to cool so I could shred it; I used a fork to make the job easier. Once I was done, I added it to the sautéed vegetables.
Stir well to combine all the ingredients and let the chicken breast absorb the flavors. I use the broth to enhance the chicken’s flavor. Then I cover the pot so the steam can help finish cooking all the ingredients.
