English version

Of all the different ways to enjoy chicken, I personally love it when it’s stewed—but with a thick, almost purée-like consistency. To achieve this, you need to add vegetables like chaco and Chinese taro, which help create that texture. This recipe I’m sharing with you is perfect for a quick lunch, since it doesn’t require any side dishes.

Ingredients:

  • 6 pieces of chicken
  • 1/2 Chinese taro
  • 1/2 chaco
  • 1 onion
  • Salt to taste
  • 1 cup of water

Preparation:

I washed the chicken pieces and placed them on a tray to drain.

Then I peeled the vegetables and diced them, while I peeled the onion and cut it into julienne strips.

In a pot over low heat, I added the vegetables, chicken, and onion, stirring for a while until the flavors blended together.

Next, I added the water, stirred it a bit, and added a pinch of salt. I put the lid on to trap the steam, which helped the vegetables cook faster. Both Chinese taro and chaco soften quickly, unlike cassava, which does require more cooking time, so I opted for the former two.

In 20 minutes, everything was ready; the consistency was perfect, and the flavor was special. By combining all the ingredients into a single dish, I avoided having to cook the chicken separately from the vegetables, saving time in the kitchen.
