Thought I would show you this amazing vegan quinoa salad my wife made for us for lunch.
She began by dicing tomatoes, bell peppers, and onions very finely and putting them in a pan with a little water on high heat. We added a Yukon gold potato, some cilantro, salt, pepper, and other Mrs. Dash no salt seasoning, and then began cooking some red quinoa in a rice cooker on the side.
We finished off by pouring it over a bed of romaine and I used the romaine to make Little wraps, which were awesome.
This is such a simple, easy meal that doesn’t take very much prep or cook time. We also added garlic I believe.
