It was a few days ago when I was confused about breakfast and decided to make a vegetable sandwich. Like many other things, this was also my first time making it but I tried to keep it simple and although this is not a recipe blog, you can sometimes try something like this for an instant breakfast which I found very tasty and it was ready in less than 15 minutes.

To make the filling, first of all I finely chopped some vegetables like capsicum, tomato, onion, chilli, cucumber, red pepper, etc.

Then, I added shredded cheese to it. This can be your choice. I like cheese, so I added a decent quantity of cheese to it.

After that I added some spices to it like salt, red chilli powder, chaat masala, etc. You can add this as per your taste because after this I have also added ketchup, mayonnaise, and Schezwan sauce which is very sweet, sour and spicy in itself, so it is your choice to add salt and chilli powder separately and then mix everything well.

Since I was alone at home that day, I brought this small bread from the market which was sufficient for me.

Now I spread our prepared vegetable mix nicely on one slice of bread and set the other slice on top of it and then I applied butter on both the sides and grilled it in a sandwich maker.

I made a nice milk coffee to go with it but I was so engrossed in these sandwiches that I forgot to take pictures of it.

It took less than 5 minutes on medium heat, and these sandwiches were grilled perfectly, and there was a lovely fresh aroma from all the vegetables.

This is a picture taken just before eating these sandwiches because I wanted to see how the cheese had melted well and how all the spices were mixed with the sauces to create a wonderful sweet, sour, and spicy flavor. This was really a good sandwich, and it took me only 15 minutes to prepare it completely, from vegetable chopping to making it whole, so it was a good choice for me. But yes, it is best eaten hot, so if you are planning to pack it for lunch, then I think you should make it without this cheese and sauce because this cheese will not taste good without heating, and the bread will become soggy in no time due to the sauce. So it would be better to make it instantely and eat it hot.
