At my house, during Tet, my mother will cook a lot of food and when the leftovers are stored for a long time, I will bring them out to make chicken soup. This is a very quick and delicious dish. Let's make chicken soup with leftovers today.
My main ingredient today is cooked chicken. Chicken is frozen in the refrigerator after not being used up in Tet dishes
There are also some other ingredients like
- Corn
- Carrot
- Enokitake
- Spring onion
- Egg

- Step 1: Boil the cooked chicken with water for 15 minutes. Then take out the chicken and shred it. This will help the chicken lose its bones and the dish will be smoother
- Step 2: add corn and carrots to boil with chicken bone broth in the previous step. Cook the corn for 10 minutes and then add the chicken and enoki mushrooms to the pot
- Step 3: Break the eggs into the soup pot. To make the soup thicker, I mix the tapioca starch with 20 ml of water and pour it into the soup pot.
