Since it was my day off, I wanted to make some food. It was a relaxing morning lounging in bed, and then a trip to the grocery store to get a few things.
My first and main objective of the day was to make some "beans". Well, since I'm eating low carb/keto, they're not actual beans because real beans have a lot of carbs. I read online that you can make a copycat version of beans with raw peanuts, so I did just that!
I put just the raw peanuts in water to boil and soften. After a few hours, I added a little bit of garlic, and some salt along the way.
They turned out like this:
They could have been a bit softer, but they look like beans to me!
My second objective was to make some bread for sandwiches. I made a couple of bun style ones, and also some bigger "sub" style ones. The sub ones were too close to each other on the pan so they grew into each other, but once they were cool I was able to easily tear them apart.
These of course are also low carb, made with almond flour and psyllium husk powder.
While I was baking those, I got hungry so I made some cauliflower "Mac" and cheese.
It was pretty good and simple to make. I just put some frozen cauliflower florets in a pot and cooked until they thawed and softened. Then I put about a tablespoon or so of butter, a handful of shredded cheese, and a splash of unsweetened almond milk. I seasoned it with salt and pepper and a little chili powder. It was nice and cheesy and the cauliflower wasn't too overpowering, though I would have preferred it softer.
Once the bread was finished baking and cooled, I was hungry again and so I made a sandwich with one of the smaller rolls. Some lettuce, pickles, tomato, salami, turkey, and mayo and mustard of course. Had it with some of the "beans" with shredded cheese and Valentin hot sauce on top. It was good and very satisfying!
