Hello you, hungry side of Hive, how are you?
It's been a while since I made something in the kitchen, so I decided to make these light and nutritious pancakes. I saw the recipe a few days ago and I had all the ingredients that I needed (and that's rare), so pancakes it is!
Let's dive right in!
Ingredients:
- 2 zucchinis
- 2 eggs
- Flour
- Salt and pepper
Simple enough, right? For preparation part, I do recommend that you peel and grate the zucchinis at least one hour before preparation. Zucchinis, especially "young" ones, have high water content. By grating them and adding a sprinkle of salt, they will let all that water out (or most of it).
After an hour or so, you can prepare the rest of the ingredients and mix it all together. You can actually squeeze the water out, but I don't do that, it tends to make the zucchini stuck together. Proceed with adding eggs, flour and spices (of your choice) and mix it all together. I added Himalayan salt and pepper, because my little one is going to eat this too.
Heat up some oil of choice, I used regular sunflower oil, a big amount of it. Put the mixture in the oil and try to form a pancake if you can. It cooks very fast, so keep an eye on it or it will go from tasty golden brown to bitter black in just few seconds.
I usually leave them on a kitchen towel to drain excess oil, and to give them chance to cool down a bit before serving it. You can eat it with tomatoes, cucumber or as we did with national milk products kajmak and mladi sir. I am pretty sure that cream is as close as it gets to kajmak but I never tried it anywhere else. Mladi sir is a type of cheese, made from milk, and white in color, with very little salt and thus perfect for children.
