A few days ago I wrote a post where I told you how tasty black coffee is, naturally sweetened with sugar cane panela. In my country, I must admit that the search for organic food is not something strange, on the contrary, it is the most common and autochthonous thing to do and it is given the popular term of Creole, especially in the provinces far from the capital, where rural life and crops in the countryside are part of everyday life.
As I expected, some friends from other countries who saw my post commented to me about the mentioned "panela de papelón" and they did not know what I was talking about, because in their countries sugar cane is not produced, so what they buy in supermarkets is processed white sugar, artificial sweeteners or at best dark sugar, or brown sugar as it is also known, and that they can get in some organic market but it is extremely expensive.
That is why I wanted to make a post dedicated especially to the sugar in my coffee, so I could tell you in detail about how you can enjoy a good homemade hot coffee, sweetened with panela de papelón. Read on, I promise to tell you about the experience in such detail that you will be left with a taste in your mouth.

I am going to try to explain in simple words why the so-called Creole coffee of my country has such a special and different flavor. As you all know, organic products give food and beverages a special touch, not only from the health point of view but also from the taste, which is much more real and natural.
Well, the same happens with the manufacture of sugar that allows me to sweeten my coffee and my life. I know that surely in the first world countries you can get in any store several brands of white sugar, but that sugar is not really natural, I mean, it also comes from sugar cane, but it has gone through many physical and chemical processes to change its appearance, color, shape and of course taste.
The "Panela de Papelón" on the other hand, is a 100% natural product, it comes directly from the artisanal process of sugar cane processing, which I am going to explain in a simple way: The sugar cane is crushed and squeezed in a kind of special mill, from there comes out a very tasty brown juice highly rich in sugar, this juice is simmered in large cauldrons making it denser, it is a process very similar to the manufacture of caramel, that thick mixture is stretched into the air to take even more consistency, then poured into square molds and allowed to cool, when unmolded then we have the so-called Panela de Papelón, or panela de caña de azúcar as you prefer to call it.

This sugar panela has an intense brown color, and a very special and distinctive flavor, most people pulverize it by hitting it with a mallet to sweeten coffee faster, although nowadays you can get products in stores that sell the handmade panela already pulverized and ready to use.
Commonly, the people who sell coffee in the street with thermoses ask you if you want normal sugar or if you want them to sweeten it with panela de papelón as an added value to their product, and although not everyone likes the smoky flavor that this natural sweetener brings to coffee, certainly many people love to drink their coffee in the mornings especially sweetened with panela because it brings to flavor, aroma, and energy to start the day.

Hace unos días escribí un post donde les comentaba lo sabroso que es el café negro, endulzado de manera natural panela de caña de azúcar. En mi país, debo admitir que la búsqueda de alimentos orgánicos no es algo extraño, por el contrario, es lo más común y autóctono que puede hacerse y se le da el término popular de criollo, sobre todo en las provincias lejanas a la capital, donde la vida rural y los sembradíos en el campo forman parte de la vida cotidiana.
Como me lo esperaba, algunos amigos de otros países que vieron mi post me comentaron sobre la mencionada “panela de papelón” y es que no sabían de qué les estaba hablando, porque en sus países no se produce caña de azúcar, así que lo que compran en los supermercados es azúcar blanca procesada, endulzantes artificiales o en el mejor de los casos azúcar oscura, o azúcar morena como también se le conoce, y que pueden conseguir en algún mercado orgánico pero es sumamente costosa.
Por eso quise hacer un post dedicado especialmente al azúcar de mi café, y así poder hablarles con detalle sobre cómo se puede disfrutar de un buen café caliente casero, endulzado con la panela de papelón. Sigue leyendo, prometo contarte la experiencia con tanto detalle que te quedarás con el sabor en la boca.
Voy a tratar con palabras sencillas de explicarles, porque el llamado café criollo de mi país tiene un sabor tan especial y diferente. Como todos saben los productos orgánicos aportan a los alimentos y bebidas un toque especial, no solo desde el punto de vista de la salud, sino también desde el sabor que es mucho más real y natural.
Bueno exactamente eso mismo, sucede con la fabricación del azúcar que permite endulzar mi café y mi vida. Yo sé que seguramente en el los países del primer mundo puede usted conseguir en cualquier tienda varias marcas de azúcar blanca, pero esa azúcar por llamarlo de algún modo no es realmente natural, me explico, igualmente proviene de la caña de azúcar, pero ha pasado por muchos procesos físico y químicos para cambiar su apariencia, color, forma y por supuesto sabor.
La “Panela de Papelón” en cambio, es un producto 100% natural, proviene directamente del proceso artesanal de procesamiento de la caña de azúcar, el cual les voy a explicar de manera sencilla: La caña de azúcar se tritura y exprime en una especie de molino especial, de allí sale un jugo color marrón muy sabroso altamente rico en azúcar, este jugo se cocina a fuego lento en grandes calderos haciendo que se vuelva más denso, es un proceso muy parecido a la fabricación de caramelo, esa mezcla espesa se estira hacia el aire para que tome aún más consistencia, luego se vierte en moldes cuadrados y se deja enfriar, al desmoldar entonces tenemos la llamada Panela de Papelón, o panela de caña de azúcar como prefieran llamarlo.
Esta panela de azúcar tiene un color marrón intenso, y un sabor muy especial y distintivo, la mayoría de las personas la pulveriza golpeándola con un mazo para endulzar el café de manera más rápida, aunque actualmente ya se pueden conseguir productos en las tiendas que te venden la panela artesanal ya pulverizada y lista para usar.
Es sumamente común que las personas que venden el café en la calle con termos, te pregunten si quieres azúcar normal o deseas que te lo endulce con panela de papelón como un valor agregado a su producto, y es que, aunque no a todos les gusta el sabor ahumado que aporta al café este endulzante natural, ciertamente a muchas personas les fascina tomar su café en las mañanas sobre todo endulzado con panela porque aporta sabor, aroma y energía para comenzar el día.
