New potatoes are out and whether you are buying them or growing your own, this easy recipe is delicious.
No need to boil first. Just cut the washed potatoes so they all have about the same mass. I left the skins on.
On low to medium heat, fry them slowly.
I used rosemary infused olive oil, but it is great with other oils or butter. Mmmm butter!
Turn the potato pieces regularly so every edge is browned.
This morning, I sprinkled a little home-made garlic powder and oregano. Salt and pepper to taste.
Reduce heat to low as they continue to cook. You will hear them sing and hiss.
Remember to fry these very slowly so they won't burn. They will be crispy on the outside and melt-in-your-mouth soft on the inside.
