Hello hivers and vegan family who loves delicious desserts and cakes of various tastes. My weekends are always for something you will love ❤️ and this Sunday is not left out with some cup cakes that taste so oven fresh.

These are delightful little cup cakes 🥮 with a refreshing and vibrant hit of citrus 🍋🍊, versatile - you could serve them for breakfast, packed lunch , weekend treat or for an afternoon tea 🍵 and coffee ☕️.

I really like the combination of lime and orange, and wanted to reflect the use of two citrus fruits in this recipe. And apart from these two based ingredients, I have added some cinnamon for flavors and soy milk for more creamy soft texture.

All you need for this recipe is to just arrange the few ingredients which is not expensive and available to us while going groceries. Lime and orange are available to us almost all year round, so its at reach at all times.

Here I will take you through the step by step of preparing this delicious vibrant delightful citrus combination cup cake 🥮

INGREDIENTS:

200 g of cake flour
2 balls of large fresh oranges
1 large lime
1/2 glass of soy milk.
1/2 teaspoon of cinnamon
1 teaspoon of baking powder
60ml of pure vegetable oil
1/2 cup of premium sugar
1/4 salt powder

STEPS FOR PREPARATION:

Step 1,

I will start by zesting the orange and the lime into a bowl . As above.

Step 2.

I will section the orange and the lime, and discard the skin. As here above.

Step 3.

Here I have the juice of the lime and the orange.

Step 4.

Next is to add the juice, pulps into the zest, adding the veg oil too, then mix together.

Step 5.

I will add the sugar, the cinnamon and salt, then mix to incorporate.

Step 6.

Added the soy milk and incorporated.

Step 7.

To mix into batter, I will add the baking powder into the flour, then sieve it into the mixture.

Step 8.

And will gradually stir into batter adding more soy milk.

Step 9.

Next is to glaze the pan cups , add the batter gradually for baking.

Step 10.

I will bake for 40 minutes at 200 Celsius . And once time elapsed, will check and its all ready, full of citrus smell and delightful.
